Armenian Gata with Puff Pastry

I was going through my older uploads, came to realize that my tutorial for  Armenian Gata with puff pastry, wasn’t detailed and properly presented. Decided to reupload it, as I also updated the recipe. Hopefully this new upload for Armenian Gata, will bring more recognition to the oldest and most popular traditional sweet.






This version of Armenian Gata, may be the quickest and easiest to make on the quick hand, considering the fact that these days every food market carries a good quality puff pastry dough. So, if the main part of the pastry is already done for you and all you need is to make the filling, called khoriz, stuff the dough with that buttery, sugary filling, cut, bake and enjoy.

Ingredients 

How to Make Armenian Gata with Puff Pastry




You will need two 10”x14” sheets of pre made puff pastry dough, thawed

1 extra large egg, separated

1 tbs milk or cream 

How to Make Armenian Gata with Puff Pastry

For the filling 

1 cup granulated white sugar

1 cup all purpose flour

4-5 tbs room temperature clarified butter (watch my YouTube tutorial to learn how to make it) or use regular unsalted butter, at room temperature 120-130 grams

1 tsp vanilla extract

1-2 tbs cognac, optional

Directions 

How to Make Armenian Gata with Puff Pastry

Preheat the oven to 375° F/190° C, line the baking pan with parchment pepper

Start by making the filling

In a bowl, combine: sugar, flour and give it a quick mix

Add the butter, vanilla extract and cognac




Using your hands, mix everything well to combine and reach to the right consistency, refer to YouTube tutorial for more details

Divide and cut the puff pastry dough into two even strips

Brush each strip of the dough with egg white 

How to Make Armenian Gata with Puff Pastry

Place a few tablespoons of khoriz (butter filling ) on the the dough, leaving about half inch from every side, empty

Using your hands, press and flatten the filing

Fold and roll twice, if the dough gets too soft, place inside the freezer to harden for easier slicing

Note* be sure to thaw the dough before baking

Cut the Gata rolls into diamond shapes, egg wash with egg yolk+milk mixture

Using a fork, make your preferred designs




Bake 25-30 minutes or until golden color

Խորիզը

1 բ ալյուր ( բաժակի չափը 250մլ)

3-4 բ շաքարավազ

3-4 ճ գ յուղ կամ հալեցրած կարագ

1 թ գ վանիլ

2 ճ գ կոնյակ, պարտադիր չէ

1 ձու, առանձնացրած

1 թ գ կաթ ,ավելացնել դեղնուցին

Թխել 180° C 30-35 րոպե
