Armenian Sweet Bread Bagharj

Delicious Bagharj, Armenian sweet bread or I’d rather call it a pastry, since it’s not made with any kind of yeast. Has no bread taste to me. Shame to say, I haven’t made this sweet bread myself, up until now , nor I recall my grandmothers baking it. But when I tasted it, strangely, it was so familiar , so close to my tastebuds and why not, to my heart.

Traditionally this Armenian sweet bread is baked in tandoori, women who bake the bread, lastly when the fire is down, would bake the sweet breads or pastries such as Gata, Nazook, Bagharj, Sini. I came across to my instagram friend’s post for this Armenian sweet bread and couldn’t help to try making it. We all loved so much, therefore I’m sharing the recipe and hope you’ll love it too. Armenian Sweet Bread Bagharj - Բաղարջ

3 eggs, I used 2 full and an egg white, save the yolk for egg wash

1 cup plain yogurt, room temperature

1 stick (113 g) unsalted butter , soft

1 cup granulated white sugar

1 tsp baking soda

1 ½ tsp baking powder

1 tsp salt

3-4 cups of all purpose flour, you need to form a soft, non sticky dough

Preheat the oven to 400°F/ 200°C degrees

In a large bowl combine all dry ingredients: 3 cups flour, salt, soda, baking powder, mix and set aside, you’ll add more flour later, if needed

In another large bowl combine butter and sugar, beat with a mixer or mix by hands, until incorporated

Add, the yogurt and eggs, mix again to incorporate and start adding dry ingredients

Place the dough onto floured surface, gently knead by adding more flour until the dough is not too sticky and soft

You can make one large bread about 11-12” or two medium size about 6”-7” diameter  

Try to form a perfect looking ball and place it on a lined baking pan

Using your hands , tap the ball into a half inch or a bit thicker disk

Mix the egg yolk with 1 tbs heavy cream or milk and brush the top of the bread

Using a fork, make lines just to give the bread a beautiful look, optional

Bake on one level below the middle rack, 30-35 minutes or until bright golden color

Place on a cooling rack and allow to cool down completely before slicing
