Comfort food at its finest: Armenian  yogurt soup Spas.This simple dish has a great, tangy and creamy taste. It can be served as refreshing, cold soup for summertime or hot and heartwarming comfort soup in cold season. Very few ingredients are needed to make this truly delicious Armenian yogurt soup Spas.This soup can be made with rice or peeled wheat, both versions of the soup are equally tasty.The key to having a smooth and creamy Spas is taking time and stir it constantly until it boils.This recipe will reduce the time of stirring as the soup is being made with boiling water and half cooked wheat.

Armenian Yogurt Soup Spas - Սպաս

Ingredients

1 1/2 cups of plain yogurt (I use full fat)

1/2 cup sour cream

1 egg

1 tbs all purpose flour

1/2 cup peeled wheat (or rice), moistened in hot water for 30 min. & strained




4-5 cups of boiling water

20 grams of unsalted butter

3-5 sticks of scallions (green onions)

3-4 tbs fresh cilantro, chopped (or mint ,dry or fresh)

Salt to taste

Directions

Wash and drain the wheat, let it stand in boiled hot water for 20-30 minutes to soften, drain, and set aside

In a large pot combine: yogurt, sour cream, flour, egg and whisk until smooth, without any lumps

Add the wheat, mix and slowly start pouring the hot water, stir while adding the water

Start cooking on high heat, while stirring constantly

As it boils, reduce the heat and allow the Spas to simmer 5-7 minutes

While the soup is simmering, prepare the butter and onions by simply sautéing the onions

Pour the browned butter and onion mixture in the soup

Add the salt for taste

Serve with freshly chopped cilantro (dry or fresh mint)

    I love watching your videos and making your recipes. Do you have a recipe for walnut preserves that you can make and put a video ? I love walnuts but don’t know how to make them. Thank you so much love!

    • Hi there,
      To be honest I never made it myself ,but used to watch my grandmo making that muraba very long time ago, I know it s a very time consuming and a bit complicated process, not sure if it’s possible to buy the fresh young walnuts here,
      I’ll look into it and see if it’s possible to make it.Cant promise it’s going to be this year though:)

  3. I love spas and want to make it today. What kind of wheat do i use? Is it pelted, peeled, or whole wheat?? I dont know which is typically used in the recipe? I thought whole wheat was atam hatik?? is it not??
