Baba Ganoush Recipe

Delicious eggplant dip called Baba Ganoush , an extremely flavorful and easy to make appetizer.

I normally make baba Ganoush every time we do barbecue. I find it to be a great side for meats , but my most favorite is to spread it on flat bread lavash, add fresh herbs: parsley , mint, cilantro, wrap and enjoy just as is, so-so delicious, try it!

Ingredients

2 medium or large eggplants, about 500-550 grams , grilled or roasted

1-1 ½ tbs tahini paste, I have a tutorial on this paste

The juice of 1 medium lemon

1-2 garlic cloves , grated , ⅓ tsp cumin




¼ tsp ground black pepper

¼ tsp cayenne

1-2 tbs olive oil, may need extra for drizzling to garnish

1 tbs strained yogurt or sour cream

Salt to taste

Directions

Poke the eggplants with the tip of a knife

Place on metal rack

Broil on high or grill until cooked through , keep an eat and turn upside down once in awhile

It’s a good idea to line the bottom of the oven with foil




Cover grilled veggies with foil and set aside to cool down

Using a processor, fork or potato masher, mix and turn eggplants into smooth or slightly chunky mixture, it really depends on your texture preference, I like mine slightly chunky

Add the rest of ingredients and mix well to incorporate

For better taste, set baba Ganoush in fridge to chill, about 2-3 hours
