Armenian Easter Dish – Lavash Baked Fish

Baked Fish Recipe

Baked fish will be one of the “must” Easter dishes on Armenian table and also one one my most favorite Easter foods. I love to bake mine wrapped with Armenian flatbread lavash. That way the fish stays moist, flaky and doesn’t get dry, plus that baked crispy lavash is an excellent side dish , surely everyone’s favorite part of that baked fish🙂







I don’t think an exact recipe is needed for this kind of simple dish, always good to improvise when cooking ,using your favorite spices, seasonings , side dishes to go with it.Since this is an Easter dish, you might want to serve it along with sautéed greens, but personally I prefer serving baked fish with roasted / baked potatoes, apples and pears. All those delicious tastes and flavors combine together so well. I’ll put down quick instructions for that as well.

Ingredients & Instructions for baked fish 

Armenian Easter Dish - Lavash Baked Fish Recipe

You will need one 5-6 lbs rainbow trout ,cleaned washed

Sea salt, to taste

Black and red ground pepper, about 2 tsp each

3-4 garlic cloves, coarsely chopped

1 lemon sliced

Dry red chill peppers ( optional)

1-2 tbs olive oil

Tarragon 1 bunch

Single layer of Lavash bread

1-2 tbs clarified butter (ghee)

To make the fish

Cover your work surface with double layers of foil

Place the fish on the foil and season both sides plus the belly with salt and peppers

Stuff the belly with garlic and lemon

Drizzle with olive oil and gently massage to cover with spices

Cover and seal the ends of the foil, as the fish marinated the juices may come out

Set in the fridge for 2-4 hours or overnight

Preheat the oven to 400° F/200°C

Prepare a baking pan lined with a foil




Remove the garlic-lemon stuffing from the fish belly and generously stuff it with tarragon

Add a few dried chili peppers, optional

Make 3-4 slices on top of the fish, just as if you slice when serving

You can stuff those with tarragon leaves as well

Place a few sliced lemons on top of the fish

Place the layer of lavash bread on the foil and brush with melted clarified butter

Put the fish on top of lavash and carefully wrap it, seal the sides and secure with toothpicks or just tack under

Brush again with clarified butter , cover with foil and bake 25 minutes covered

Remove the foil and bake 15 more minutes or until the lavash is bright golden color

Allow the fish to set 10 minutes before serving

Optional

For baked side dish

7-8 medium size red potatoes, washed cubed

3-4 small anjou pears

3-4 small gala apples or any apples that bake well

Olive oil

Sea salt

Black and red ground peppers

1 -2 tbs dried dill or oregano

1 tsp garlic salt

Season everything ,drizzle with olive oil, toss and place on a non stick baking pan

( I line the baking pan with heavy duty aluminum foil and drizzle with non stick spray)

Bake along with the fish, at 400° F/200° C degree , 35-40 minutes or until fully cooked

Turn once to make sure everything is baked evenly
