Baklava Rolls Recipe

In my opinion baklava rolls are the most original looking among all the other shapes and kinds of that delicious pastry. I have been craving for baklava for a while and decided since I’m baking for us, might as well make a YouTube tutorial. I’m sure many of you would like to learn how to make those baklava rolls.







I’ll try to be very specific and detailed to help you make them perfect at the first try.

The key to the perfect looking baklava rolls is to make them with perfect looking filo layers, as the ones that rip quickly may destroy the look , so prior starting be sure to check the layers and use any ripped ones to cover the bottom of your baking pan. Also be sure to grind or crush the nuts very finely but not too fine either. Check the nut mixture and remove any big chunks, so when you make your baklava rolls , the filo doesn’t rip.

Baklava Rolls Recipe - Փախլավա

Ingredients

You will need a pack of thin filo dough, thawed

300-350 ( 3 sticks) grams of unsalted butter, melted

You will also need a 13”x9” baking pan and about ½” wide, 16”-18” long round stick

For the filling

3-3 ½ cups finely ground toasted nuts ( I used a mix of walnuts and almonds, use any of your favorite nuts)

To toast the nuts simply place them in 350° F / 180° C preheated oven about 7-10 minutes

¼ tsp ground cinnamon

⅛ tsp ground cardamom

⅛ tsp ground nutmeg

⅛ tsp clove powder

½ cup sugar

For honey syrup

⅔ cup honey, ⅔ cup hot water

½ cup sugar

1 tbs fresh lemon juice




2 tbs orange blossom water

For regular sugar syrup

1 cup hot water, 1 ½ cups sugar

1 tbs lemon juice

2 tbs orange blossom water

Directions

Preheat the oven to 350° F/ 180°C degrees

In a bowl mix together the nuts, sugar and all the spices, set aside

Brush the baking pan with butter and place a layer of filo, brush again

Making the baklava rolls

Place a layer of filo on your work surface ( I always line my work surface with foil for easy cleaning)

Brush with melted butter and place another layer on top, brush again

Sprinkle the nut filling on buttered layer , leaving blank about 2” from the top and the sides and about 6” from the bottom

Place the stick on the very bottom of the layer and start rolling lightly

As the stick gets closer to nuts, start brushing the roll with butter




Using both hands, gently press the ends of the roll toward the center forming a wrinkled roll

Try to accommodate the length to the size of your baking pan

Continue doing the same with the remaining of your ingredients

You should end up with 8-9 rolls

Brush the tops with butter and bake 35-40 minutes or until golden color

Making the syrup

In a heavy bottom saucepan mix all ingredients and bring to a boil

Lower the heat to medium and simmer for 7-10 minutes

Pour the hot syrup over ready baklava and slice immediately, so it absorbs the syrup better

Allow to set at least 30-40 minutes before serving

You can freeze baklava up to 2 month

Simply wrap the leftovers in a foil and freeze, do that the same day you baked it

2 բ շաքարավազ

2.5 բ ջուր

Կես կիտրոնի հյութը ,կարող եք կեղևն էլ ավելացնել

Դարչին, վանիլ ըստ համի, ես նարնջի ծաղկի օշարակ ավելացրեցի, պարտադիր չէ

 

Թխել 180°С , 40-45 րոպե, կամ մինչև դառնա ոսկեգույն
