Beef Empanada

From my “street food made at home” menu , as I call these delicious and irresistible fried appetizers : chebureki in Russian, similar to beef empanada ,fried dough with spiced ground meat filling ,that’s really juicy,spicy and flavorful. The dough for these chebureki is called: cooked dough, as it’s made with boiling water and as my secret ingredient I always add a tbs of vodka to make the dough even more bubbly.

Traditionally these are made with ground lamb or beef, but I’m sure you can also use ground chicken or turkey to your taste.

For the dough :

3 cups of all purpose flour

1 cup of boiling water

1 egg

1 tbs vegetable oil

1 tbs vodka (optional)

1 tsp salt

1 tbs sugar

For the filling

250 grams of ground beef (or turkey/ chicken , I also like mixing different meats)

1 medium onion,ground or finely shredded

Salt to taste 1-2 tbs

1 tbs black pepper

1 tsp garlic salt

1/2 tsp cayenne

1/2-1 cup of cold water

Dry or fresh greens to taste ( parsley will be the suggested kind)

You will also need about 2 cups of oil for frying ( I use grapeseed oil, but any kind will work)

Making the dough

In a small bowl combine and whisk the egg,vodka and oil

I a large mixing bowl combine flour, salt, sugar and give it a quick mix

Add the egg mixture to flour mixture and mix with a spoon to combine

Then add the hot water, mix and knead until it forms into a non sticky dough

Let the dough rest while you prepare the filling: by simply mixing all the ingredients

Divide the dough into 8-10 portions ( you can also make these mini sized 16-18 small portions)

Roll out the dough into thin 81/2″x9″ diam circle shape

Place some of the filling on one half and fold the other half forming a half moon shape

Using a pizza cutter slice the edges to make it look neat and even

Use a fork and firmly press the edges to seal

Fry in 375°F hot oil 1-2 minutes on each side or until golden color

Serve hot
