Blueberry Lemon Scones Recipe

Blueberry lemon scones possibly the best scone recipe I’ve ever tried or shared. So light, crispy on the outside , fluffy on the inside, simply irresistible sweetness. Not to mention that light tartness from blueberries, completes the beautiful taste of simple yet gourmet cookies, called scones.

A must try for those who like myself, enjoys not too sweet and flaky pastries .

Ingredients

2 ¼  Cups all purpose flour

½  Cup granulated sugar

¼ Teaspoon salt

2 Teaspoon baking powder




1 Teaspoon vanilla extract,1 Tablespoon lemon zest

1 Cup washed drained fresh blueberries (I make this same recipe with dried cranberries )

100 Grams of cold unsalted butter , sliced

1 Egg ,beaten

½ Cup full fat milk (or heavy cream)

For topping

¼ Cup firmly packed light brown sugar

¼ Cup flour

2 Tbs cold butter sliced

1 Tsp lemon zest

½ Tsp cinnamon (optional)

Just mix all these ingredients together with a fork and set aside

Directions

Preheat oven to 375° and line the baking sheet with parchment paper

In a bowl combine:flour,sugar,salt,baking powder,lemon zest and mix to combine

Add sliced cold butter and mix using pastry blender ,or 2 forks,or your fingertips

The mixture should look like coarse crumbs

Add blueberries and toss gently to combine

In a separate bowl mix together milk ,vanilla and egg, add to flour mixture and stir until the dough forms




Do not over mix

Add a bit extra flour if needed ,just enough to form a non sticky but not firm dough

Transfer the dough onto a floured surface

Divide into 3 balls ,tap with your palm to flatten into approx. 5” circles

Brush the tops with milk or cream ,to help the topping stick better

Sprinkle with prepared topping and slice into triangle shapes (like pizza slices)

Place the scones on a lined ,or greased non stick baking sheet

Bake about 20-25 minutes or until golden color

Ստրուսելը

15-20 գ սառը կարագ

¼ բ շագանակագույն շաքարավազ

¼ բ ալյուր

Պտղունց դարչին

1 ճ գ կաթ կամ սերուցք խմորին քսելու համար, որ ստրուսելը կպչի

Թխել 190°C նախապես տաքացված ջեռոցում, 20-25 րոպե
