Borscht Soup Recipe

You don’t have to be Ukrainian to make a perfect borscht sou. I remember my mom and grandmother making this delicious veggie soup very often, spending so much time slicing and chopping all the veggies one by one. In summertime they’d make the vegetarian borscht soup  , with new cabbage and green sour plums, my favorite kind. They’d also make it with slow cooked beef chunks and broth, that one was my dad’s favorite . Well , for him borscht wasn’t a real borscht without that meat in it.
I will put down a quick recipe for meat version as well, hope you’ll try and like this very flavorful and bright colored borscht soup, a dish from Ukrainian cuisine.

Ingredients

1 small ( about 1 ½ lbs) green cabbage, finely sliced

2 large beetroots ,one shredded the other one cubed

3 large carrots, shredded

1 large onion, finely chopped

2-3 medium potatoes, cubed

3-4 tbs olive oil, or any vegetable oil

3-4 garlic cloves, minced

1-2 fresh green chili pepper, or green bell pepper, ( I cut into large strips, later remove from soup)

½ tbs tomato paste , or 2-3 tbs tomato sauce

2 tbs salsa or lecho ( Armenian version for salsa)

2 tbs red pepper paste

2-3 bay leaves

2-3 tbs finely chopped fresh parsley or cilantro , you can use both

1 tsp black pepper

1 tsp ground coriander

½ tsp curry powder

6-7 cups boiling hot water

Salt to taste

For borscht with meat

1-1 ½ lbs chopped slow cooked beef tenderloin and the broth, it’ll taste even better if you get bone in meat

The rest of ingredients with be the same, as mentioned above

Directions

Start by cutting, shredding, slicing all your vegetables

In a large stock pot, saute  the onions until translucent

Add shredded carrots and beetroot , ( remember to save the second beetroot for later )

Cook 3-4 minutes or until slightly tender

Add sliced cabbage and potatoes and cook a few more minutes, until the cabbage is tender

Stir in : tomato paste, salsa and pepper paste ( it’s a good idea to mix all these together before adding), refer to YouTube tutorial for more details

Add boiling water or beef stock with meat, cook on medium heat for 10-12 minutes

Time to add seasonings, spices, and green pepper, except for the salt and parsley

Cook another 10 minutes or until potatoes are cooked

Add chopped parsley, salt and cook 3-4 minutes

Allow the soup to set at least 15-20 minutes and enjoy!

650-700 գ կաղամբ

3-4 հատ (250 գ) միջին չափի գազար

3-4 հատ (350-400 գ) բազուկ, մի մասը խոշոր կտորներով ավելացնել

1 գլուխ սոխ

3-4 պճեղ սխտոր

2 հատ խոշոր կարտոֆիլ

3-4 ճ գ բուսական յուղ կամ կարագ

6-7 բ եռման ջուր կամ արգանակ

Լեչո, տոմատի ու կարմիր տաքդեղի մածուկ

Կանաչ պղպեղ

Մաղադանոս , համեմ

Համեունքները` սև ու կարմիր տաքդեղ, կարի, կորիենդեր
