Breakfast Soup Recipe -Konchol

Breakfast soup may not be the most common type of that most important meal of the day. However if it is very filling, has common breakfast ingredients in it, than it is certainly a meal you’d serve early to keep you going strong and full for a few hours.







This simple breakfast soup, or as we called it “ Konchol”, happened to be my least favorite meal , as a kid, well maybe up until now. Last time I remember trying it when I was 6-7 years old. I was never a fan of cooked onions, especially when those were sliced in big chunks. Now I’m not as picky as I used to be, so , I somehow enjoyed this soup , it did taste really delicious with garlic yogurt, an important addition to the dish.

Breakfast Soup Recipe -Konchol -Armenian Cuisine

Ingredients 

Recipe for 2 person

1 medium or large  onion, finely chopped

70 g butter or ghee

3 ½ cups boiling water

2 large eggs, slightly beaten




1 tbs dry thyme, I used a few stems of fresh, use cilantro, dill or parsley if you like

Salt, black and red pepper to taste

A day or two old sourdough bread

Plain yogurt mixed with garlic

Directions 

Sauté onions with butter until light golden color

Add water and bring to a boil

Mix in the eggs, herbs , spice and season to taste

Remove from the heat and pour the mixture over coarsely sliced bread chunks




Serve hot drizzled with garlic yogurt

1 գլուխ սոխ, միջին չափի

70 գ յուղ կամ կարագ

2 3 ձու

3.5 բ եռացրած ջուր

Աղ, սև ու կարմիր տաքդեղ ըստ ցանկության

Չոր կամ թարմ ուրց, կարելի է նաև համեմ կամ մաղադանոս ավելացնել

Հին հաց

Մատուցել տաք վիճակում

Սխտոր մածնով շատ ավելի համեղ է
