Bulgur Salad – Itch Salad


Bulgur Salad Recipe


Healthy, easy and quick to make bulgur salad from Armenian cuisine. One of my and my children’s favorites. I’d say it’s more of a winter time salad, but when you crave a comfort food, this salad can be perfect just anytime of the year. My version for this bulgur salad is slightly different from the traditional but if I’m not happy with my test results on any recipe, I won’t bother to share:)

Bulgur Salad Recipe

Ingredients

Bulgur Salad Recipe

1 – 1 ½ cups bulgur ( #1 finest grind)

Hot water for wetting bulgur (quantity doesn’t matter )

3-4 tbs olive oil

1 medium size onion, finely chopped

1 tbs tomato paste

4-5 tbs tomato sauce

½ tsp ground cumin




½ tsp ground black pepper

1 tsp paprika

½ tsp aleppo pepper ( or any ground red spicy pepper)

2 tbs dry mint

Salt to taste

1 medium size lemon, you’ll need all the zest and juice of half lemon

⅓ cup fresh parsley, finely chopped

⅓ cup fresh scallions, finely chopped

½ cup fresh or roasted red pepper, chopped into small chunks

⅓ cup pomegranate seeds

A few leaves of Romaine lettuce ( optional)

Directions

Bulgur Salad Recipe

In a large skillet heat the oil, add chopped onions and sauté until golden color

Add tomato sauce, paste ,mix and cook 1-2 minutes

While the onions are browning wet the bulgur with hot water and set aside

Drain the bulgur and add to cooked onions and tomato sauce

Add dry mint,cumin, black pepper, red peppers, and salt




Mix and cook over medium heat for another 1-2 minutes

Remove from the heat and allow to cool down while you chop the fresh greens

Add lemon juice, zest, fresh greens, fresh red pepper and pomegranate seeds

Toss everything well and serve over fresh sliced romaine lettuce
