Chicken and Mushrooms Recipe
Delicious chicken and mushrooms dish that I made for my YouTube channel viewers. I haven’t made this exact same dish before, but thought I can figure out something quick, easy and delicious if I want to, anyone can do that of course. And since many of us Armenians cook exactly this way, meaning : without any specific recipe, as long as we have the right ingredients on hand, foods that taste wise will go together well. This happens to be my favorite kind of cooking, spontaneous, quick and with love.
I’ll try to put down an exact recipe for this chicken and mushrooms dish and hope many of you will try and like it.

1 whole chicken about 3-4 lbs, or use the parts you prefer , cooked until tender, salt to taste, save the broth
1 pack mushrooms, about 350 grams, I used white but any kind will work
1 can chickpeas or 1 cup dry peas, be sure to place those in cold water overnight or longer, drain the water before cooking
3-4 mini bell peppers or 1-2 large ones, sliced
4-5 tbs olive oil
1-2 medium onions, thinly sliced into semi circles
2-3 cloves of garlic, minced
1-2 tbs tomato paste, you can also add ⅓ cup tomato sauce
3-5 tbs salsa
2 tbs red pepper paste
½ tbs grated fresh ginger
1-2 tsp ground black pepper
1 tsp red chili flakes
½ tsp cumin
1 tsp curry powder
A few branches of fresh thyme or 1 tsp dry
Fresh chopped herbs with your choice: parsley, cilantro,dill or basil
In a large deep skillet or pot, combine olive oil and onions,saute until tender
Add mushrooms, bell peppers and cook a few more minutes or until tender
Add the chicken, chickpeas, tomato and red pepper paste, salsa, spices, garlic and as much broth , as you need to cover the chicken
Reduce the heat to medium-low and cook covered about 10-15 minutes
Let it set 15-20 minutes and enjoy with freshly chopped herbs
