Chicken Walnut Salad Recipe
Chicken walnut salad from Armenian cuisine. A very simple salad made with well cooked chicken breast meat, walnuts and a few other simple ingredients.
My mom used to make this salad during winter holidays, so this salad is a warm reminder of New Year’s , cold winter days and childhood. This same salad can be made with beef, again , it’s important that you cook the meat to the point where it falls apart .
And as many wintertime Armenian salads, this one has a good amount walnuts and a little amount of garlic, to enhance the taste of the meat.

2 chicken breast halves, cooked
2 tbs sour cream
1 tbs mayo , add more if the meat is too dry after final mix
¾ cup chopped walnuts
1 clove of garlic, finely grated or minced
¼ tsp ground black pepper
¼ cup pomegranate seeds
Salt to taste
Optionally you can add fresh dill, parsley or cilantro
Shred the chicken meat into thin pieces, using your fingers or two forks
Combine the sour cream, mayo, salt, garlic and black pepper in a bowl and mix until incorporated
Add the mixture to the meat, then add walnuts and mix
Place the salad in a salad bowl and garnish with pomegranate seeds and chopped walnuts, optional
Allow the salad to set in the fridge 15-20 minutes and serve
