Chocolate Chunk Homemade Cookies
1 Cup unsalted soft butter
2 Eggs (room temperature)
½ Cup light brown sugar ( firmly packed)
½ Cup white granulated sugar
½ Cup cocoa powder
2 1/4 Cup all purpose flour
1 1/2 Tbs Corn starch
1 Tsp vanilla extract
1 Tsp baking soda
1 Tsp baking powder
¼ Tsp salt
2 Tbs rum or cognac (optional)
10 oz chocolate chunks (divided )
Preheat oven 370 degree F
In a bowl combine your dry ingredients :
Flour,sifted cocoa powder,salt,baking powder ,soda and set aside.
In a mixer bowl ,with paddle attachment ,beat the butter with brown and white sugar ,until it’s fluffy and doubled in size,lower the speed and beat in the eggs, one at a time, stop and scrape when needed,add vanilla extract and start adding your dry ingredients slowly, in 3-4 batches,until incorporated.
Add 8 oz chocolate chunks (you can also use milk or semisweet chocolate chips) to the butter and fold in with spatula, do not use mixer not to crush the chocolates.
Use an ice cream scoop (about 2 tbs) to drop the dough on a prepared baking sheet.Use some of the saved chocolate chunks to decorate the cookies before you bake.
Baking time is about 10-14 minutes or until the edges are a dark color.
