If anyone who loves cured salmon knew how easy it is to make, they’d make that delicious appetizer at home instead of buying it. I’ll give you a few quick tips and directions as a specific recipe is not required for something like this.
Fresh fish (never frozen)
Sea salt (any type of salt is okay)
Vegetable oil (preferably without any flavor, I never use olive oil for this)
Black pepper seeds
Wash the fish thoroughly (pat dry with a paper towel)
Remove any bones that you can find
Trim the sides to remove any excess fat
Generously cover each side with salt and use one or two tbs of sugar on each side
Gently massage the salt into the fish
Place it in a covered glass or plastic container for 12-18 hours in the fridge
Remove and wash the fish to remove all of the salt
Pat dry with a paper towel and place it in a clean container filled with oil
Add black pepper seeds and a few bay leaves
Allow to sit in the fridge for another 8-12 hours
Slice very thin and enjoy!
