Dandelion Salad Recipe
Seeing those beautifully grown dandelion leaves in my own backyard, made me think of sharing an easy, healthy and delicious dandelion salad recipe.
Although I make dandelion salad all year around, this is the right season to get the freshest and the most tender greens. This time I used organic, if I can say “home grown” , dandelion leaves.
It’s been raining last few days and my backyard grew into a very well nourished wild garden, full of my springtime favorite herbs.
This is another one of those versatile recipes, that you can improvise by adding any of your favorite herbs, veggies , season the way you prefer, and trust me , it’ll turn out just perfect. What’s important, is to have that healthy and nutritious herb among the ingredients. Those who don’t like slight bitterness of this herb, I’d suggest to mix it with any kind of lettuce to lighten the bitter taste.
I love making a good wrap with warm pita and a light touch of fat free feta cheese. The perfect and delicious meal for anytime of the day, something I’d enjoy eating daily.
These days, most supermarkets and grocery stores have this herb for sale year around , so it’s easy to find and I do recommend to try this recipe.

1 bunch of dandelion, thoroughly washed and coarsely chopped
5-7 scallions, finely chopped
6-8 red radishes, sliced into semicircle or smaller
2 medium cucumbers, sliced into semicircle or cubes
3-4 tbs fresh mint, finely chopped
3-4 tbs fresh parsley and dill, finely chopped
The juice of one large lemon
2-3 tbs olive oil, I used garlic flavored oil
Use 1-2 minced garlic cloves if you wish
½ tsp ground black pepper
Sea salt to taste
Optionally you can add any kind of lettuce to lighten the bitterness of dandelion
Feta cheese is another good but optional addition to this salad
Combine all the ingredients in a large bowl
Give a good mix and enjoy
