Dried Bean Soup Recipe

The best comfort food of all times: my grandma’s dried bean soup. She’d make this soup in wintertime, with beans she grew in her own, enormous garden. I remember us, all her grandchildren, helping her to harvest the beans in late summer, and then gather around kitchen table and help her to separate the bean seeds from shells and set aside so that she can dry those and store for winter.

She’d serve this dried bean soup with a few day old bread, and with her homemade pickled veggies.

Now, every time I make this soup, she’s the one and only person who comes to my mind. I know, she wouldn’t have approved some of my changes to the recipe, but I’m sure she’d still be proud of me for keeping our traditions and for sharing the best of our Armenian cuisine.

Dried Bean Soup Recipe - Armenian Cuisine

1 ½ cups dried beans, I used light red kidney beans

Water for wetting and cooking the beans

1 medium onion, finely chopped

3-4 tbs vegetable oil or butter

1 tbs with hip flour

1½ tsp tomato paste

2 tsp red pepper paste (optional)

2-3 cloves of garlic, minced

1-2 tsp dried dill

1-2 tsp dried basil, you can use fresh herbs if you like

½ tsp ground black pepper

1 tsp ground coriander , feel free to use some of your favorite spices (cumin,turmeric, paprika,cayenne will work very well)

⅓ cup chopped walnuts

1 egg, beaten

Salt to taste

Start by wetting the beans with hot water, for 1-2 hours

Discard the water, add more water, just enough to cover the beans,bring to a boil,and discard the water

Place the beans in a large pot and add 7-8 cups of cold water and cook on medium to low heat until tender, if the water simmers too much add more water

While the beans are cooking, you can go ahead and prep your other ingredients

In a large skillet combine the onions and oil, saute until translucent

Add the flour, stir with a whisk to combine and continue cooking by constantly mixing,2-3 minutes or until the mixture turns dark color

Stir in tomato and pepper pastes, spices, herbs,garlic

Take about ½ -1 cup of the boiling water from beans, and pour over the tomato,flour mixture, stir and cook 1-2 minutes

It should have thick consistency

Use a potato masher or hand blender to coarsely mash the beans

Start adding the flour mixture to the beans a tablespoon at a time and stir constantly to avoid any lumps

Add the salt, walnuts

Turn off the heat and stir in the egg

Cover the lid and let it soup set 15-20 minutes

The soup is ready
