Meat Dumplings – Պելմենի Բորակի

Dumplings Recipe

These dumplings called pelmeni have been one of my favorite dishes since childhood. The preparation isn’t hard at all, the process of shaping takes a bit time, but at the end it’s well worth it. I like making these dumplings in big batches and freeze them in individual ziplock bags for later use. They can be stored in freezer up to 2 months.

Ingredients

For the dough

1 ½ cups of water, cold or room temperature

1 medium egg, beaten , 1 tbs salt, 1 tbs sugar

3 ½ – 4 cups of flour, add more if needed to make non sticky dough

For the meat filling

1 lbs ( 450 grams) fresh ground meat , I mix beef and turkey

½ cup cold water, add more water if you need to make the meat softer

1 medium onion , finely ground

1 tsp ground black pepper

½ tsp cayenne or Aleppo pepper

1-2 tsp dried basil,dill  or cilantro, use any of your favorite dried herbs

1 tsp garlic powder or 1 minced fresh clove

Salt to taste

You will also need

boiling water

bay leaves

melted butter

Sour cream or yogurt

Directions

To make the dough




Mix all the ingredients and knead to a non sticky dough, set aside while you make the meat filling

To make the filling

Grind the onion and water in your food processor

Add all the seasonings and spices and pulse a few more seconds

Add the spiced mixture to the meat and mix well to combine, add more water if needed to make the meat filling a bit softer

Divide the dough into 3 or 4 pieces and form them into balls

Rollout each ball into thin layer , use a 3” cookie cutter and cut the rolled dough into equal circles ,you can also use a ravioli mould

Place a teaspoon of the meat in the center of the dough

Shape as a half moon by sealing the edges, then bring both ends together and seal

Place on a tray lined with wax paper or dusted with flour

Cook your dumplings in boiling water seasoned with salt and a few bay leaves 5-7 minutes

Enjoy while hot ,topped with melted butter, ground black pepper, yogurt or sour cream

2 բ գոլ ջուր

2 թ գ աղ

3 թ գ շքարավազ

4 բ ( կարող է ավել) ալյուր, որ ստացվի չկպչող, մի քիչ պնդոտ խմոր

Միջուկը

750 -800 գաղացած, թարմ միս ( ես խառնում եմ տավարն ու հնդկահավը)

1 գլուխ աղացած սոխ

1.5 բ (կամ ավել) սառը ջուր, պետք է միջուկը փափուկ բաղադրություն ունենա

1 պճեղ սխտոր

Աղ, սև ու կարմիր պղպեղ, քեմոն, կորիանդեր` համեմի սերմի փոշին,սրանք ավելացրեք ըստ համի

Կարող եք համեմել ձեր նախընտրած համեմունքներով, չոր կամ թարմ կանաչեղեն ավելացնել
