Eggplant Dip Recipe

Who doesn’t like a good homemade eggplant dip, especially made with fire roasted vegetables. I love, love eggplants : fried, roasted, grilled, cooked,you name it. It’s my absolute favorite vegetable and I can’t stop experimenting on eggplant recipes. Each and every time it’ll turn out something super yummy. Want to share my recipe for this delicious eggplant dip, my oldest children’s favorite food, and by the way, this is the only thing they’d eat, that has eggplants as an ingredient, as my son says: this is the best way to eat vegetables. I’m even thinking to come up with more vegetable spread recipes, what if this isn’t the only veggie spread they’d fall in love with.

Ingredients

4-5 lbs medium size eggplants ( I buy Italian eggplants )

2 large onions

1 lbs green bell peppers

1 lbs red bell peppers, I also add ½ lbs fresh hot chili peppers or jalapeños ( optional)

4-6 garlic cloves

⅓ cup olive oil

1-2 tbs tomato paste

⅓ cup salsa ( or lecho, the Armenian salsa)

3-4 tbs red pepper paste ( recipe can be found in my blog )

½ bunch fresh parsley ( about 3-4 tbs chopped)

½ bunch fresh cilantro

2-3 tsp ground black pepper

1 tsp ground cumin




2 tsp ground coriander

1 tsp curry powder (optional)

1-2 tbs paprika ( optional)

1-2 tsp cayenne ( optional)

3-4 bay leaves

Salt to taste

Directions

Grill or broil vegetables, peel and clean from seeds , refer to YouTube tutorial for more details

You will need a food processor or grinder to mince all your ingredients

Start by grinding the onions until smooth, set aside

Next, grind together eggplants and peppers, set aside

Lastly, combine and pulse together:garlic, tomato paste, salsa, red pepper paste and herbs

We can now start cooking our eggplant dip

In a large pot combine olive oil and onions, sauté until light golden color

Add eggplants and peppers mix , cook 10-15 minutes

Lastly add the mixture of tomato paste,garlic,herbs, salsa…

Mix everything to incorporate

Now add all the spices, seasonings, bay leaves and cook another 15-20 minutes, on medium to low heat

Constantly stir to avoid sticking on the bottom

Let it cool down and enjoy!
