Ferrero Rocher Crumb Cake

I’ve been wanting to make a recipe for Ferrero Rocher crumb cake for a while and luckily I came up with a pretty simple, well maybe not that simple, but quite an original version of chocolate hazelnut crumb cake. Several things can be added to this recipe, such as placing the actual chocolates inside the cake, which I didn’t really like ,as the wafer softened after baking, also the cake can be cut in the center and frosted with your favorite chocolate buttercream or any other frosting.
I’d suggest to try this version and if desired add those extras to the recipe.

Ingredients

Ferrero Rocher Crumb Cake
For the cake batter

3 eggs, at room temperature
2/3 cup of granulated white sugar
1 tsp vanilla extract
1 cup of heavy cream (or full fat milk), divide the cream into 2 half cups portions
2 tbs instant coffee
1/2 cup semisweet chocolate chips
1/2 cup Nutella
1/2 cup vegetable oil (or melted butter)
1/2 cup finely grated toasted hazelnuts, use a food processor to pulse a few minutes
1/2 cup of almond meal (almond flour), again you can make your own almond meal using your food processor and finely grind raw almonds
1 1/2 cup of regular all purpose flour
1 tsp baking soda
2 tsp baking powder
1/4 tsp salt

For the streusel topping

50 grams of unsalted butter ,at any temperature
1/3 cup of firmly packed brown sugar
1/3 cup of flour
1/2 cup of cowardly chopped toasted hazelnuts
For the chocolate ganache
1/2 cup of semisweet chocolate chips
1/3 cup of Nutella
1/4 cup of milk
2 tbs of hazelnut liqueur ( optional )

You will also need an 8″-9″ round springform baking pan, greased and lined with parchment paper
7-9 Ferrero Rocher chocolates for topping the cake ( optional)

Directions

Ferrero Rocher Crumb Cake

Preheat the oven to 350°F/ 180°C
Start by combining your dry ingredients
In a large bowl mix :flour, almond meal, grated hazelnuts ,baking powder ,soda and salt,set aside
Prepare the streusel topping by mixing all the ingredients with your fingertips or a fork,set aside
In another bowl combine : coffee,chocolate chips and half a cup of the hot cream,mix to melt the chocolate and coffee
Add Nutella ,oil ,the rest of the cream (1/2 cup) and mix everything into a smooth mixture,set aside to cool down completely
Beat the eggs, sugar and vanilla extract on high speed, until pale and fluffy
Slowly add the coffee- chocolate mixture to the eggs and fold in gently, try not to deflate the egg mixture
Add in the dry ingredients in a few additions and mix gently with a spatula
Pour the batter in the pan and top it with streusel crumbs with chopped hazelnuts
Bake 45-50 minutes or until the toothpick comes out clean
Let the cake cool down completely
Prepare the ganache
Heat up the milk and pour over the chocolate,mix until smooth consistency
Add Nutella and liqueur
Line your work surface with a foil and place the cake on a cooling rack
Pour the ganache on the sides of the cake allowing to drip and cover the sides
Use the Ferrero Rocher chocolates to decorate the cake ,by placing those in the center or to your taste

    • I really can’t tell exactly, as I haven’t tried, but you can try to substitute with apple sauce ,or better Google and see what results you can get for the egg substitute 🙂
