As much as I like creating and testing recipes for different desserts and dishes, bread recipe experiments are by far my favorites. Decided to spice up the focaccia bread  by adding a few extras. Plus this time I made the dough even easier to work with and thanks to cold fermentation the shaping turned out very quick and simple.

Focaccia Bread with tomatoes,garlic and Parmesan , this will be the proper name for the bread.

Focaccia Bread with Tomatoes

1 1/4 cups of warm water

2 tbs extra virgin olive oil, plus more to grease the bowl and baking pan

1 tsp instant dry yeast (if using active dry yeast, activate before adding)

1 tsp sea salt

1/4 cup semolina, plus more for dusting the baking pan

2 tbs grated Parmesan cheese

1/2 tbs sugar

3 cups of all purpose white flour

To top the bread

You will need 6-8 cherry tomatoes, fresh thyme leaves, rubbed with olive oil

Coarse salt and black pepper

To make the garlic-Parmesan spread

3-4 tbs olive oil

2 tbs grated Parmesan

2 cloves of garlic, minced

1/4 tsp black pepper

Just mix everything together and set aside

In a mixing bowl combine all the ingredients for the dough and knead on medium speed 7-10 minutes

Generously drizzle a large bowl with olive oil

Place the sticky dough inside the bowl, turn to cover both side with oil

Cover with plastic and let the dough rise 1-2 hours

Remove the air out from the dough ,cover again with plastic and place it in the fridge for cold fermentation , another 1-2 hours

Generously grease the baking pan with olive oil, sprinkle with semolina or cornmeal

Place the dough inside the pan and shape it to fit the pan

Focaccia Bread with Tomatoes

Using your fingertips stretch and dot the dough

Place cut tomatoes on the dough ,sprinkle with thyme leaves, coarse salt and black pepper

Cover and let it rise another 40-45 minutes

Bake in 475°F / 200°C oven for 15-20 minutes

Brush the bread with garlic-Parmesan – oil spread and remove from baking pan onto a cooling rack

Allow the bread to cool down at least 15 minutes,before slicing
