Fried Beef Liver Recipe

A dish from Armenian cuisine called Tjvjik, which is a fried beef liver with a good amount of onions, spiced and seasoned with salt and pepper. This is one of those love or hate dishes, not everyone enjoys the specific smell and taste of cooking beef liver. Me as a child, couldn’t stand this dish, but as I gave it a try, I figured out what I’ve was missing out on. Now none of my children would bother trying fried beef liver, even worst, every time I cook this dish, they’d go to their rooms, shut their doors, to not be bothered by the smell.

Traditionally Tjvjik is made quite simple: they’d fry a good amount of onions, add the sliced meat, salt, and pepper, cook until done. I want to share my version of the dish.

Ingredients 

Fried Beef Liver-Tjvjik Տժվժիկ-Armenian Cuisine

2-3 lbs fresh beef liver

bowls filled with hot and cold water

3-4 tbs olive oil, or any vegetable oil

2-3 large onions, sliced into semicircles

1 fresh green chili pepper, slices into strips, use bell pepper if you don’t like it spicy

1 tsp ground black pepper

Salt to taste

For tomato sauce you will need:

½ cup water

1 tbs tomato paste or 3-4 tbs tomato sauce

1-2 tbs red pepper paste, I have a YouTube tutorial for this paste

2-3 cloves of garlic, minced

2-3 tbs butter, optional

1-2 tbs freshly chopped herbs, I used parsley and cilantro

Directions

Start by prepping, slicing the meat

Wash the meat

Immerse it in a bowl with hot water for 1-2 minutes, then in the bowl with cold water, for a minute or so

Remove from cold water, tap dry with paper towel and peel off the skin, refer to YouTube tutorial for more details

Slice the beef liver into small bite size cubes, be sure to remove all the unnecessary skin off the meat

In a large skillet combine the oil. add onions, fry until golden color

Add the meat, chili and ground pepper, salt , toss and cook covered, 7-10 minutes or until it’s cooked through, you can test it by cutting the meat, if it’s still red, cook a bit longer

While the meat is cooking, prepare the tomato sauce

In a cup or small bowl combine water, pepper and tomato paste, garlic, mix until smooth

Add the tomato sauce and butter to cooked meat and continue cooking for 4-5 minutes

Add the herbs, turn off the heat, cover the lid and allow to set 10-15 minutes

Serve with a side of mashed potatoes or rice, or anything you like as a side with your meat
