Armenian Gata with Walnuts

Armenian Gata again, this time from scratch and with different filling.Of course the same recipe can be used to make Gata with traditional butter-sugar-flour filling, but you can always add extra spices or nuts to give it slightly different  flavor. In fact in Armenia ,different regions make different kinds of Gata , and that’s a pastry that everyone loves and serves to their guests ,especially on New Years. Well , nowadays, that may not be very common, as there’s a big variety of pastries, desserts and cakes and some even forgot about that very delicious Armenian pastry.

Getting to the recipe and hope many will try and see what a delicious treat that it is.

Armenian Gata with Walnuts Гата Գաթա


For the dough

2 1/2+ cups of all purpose flour

1/2 tsp baking soda

1 tsp baking powder

Pinch of salt

1 1/2 tbs sugar

150 grams of cold unsalted butter, cubed

1/2 cup of full fat plain yogurt

1/2 cup of sour cream

1 egg separated

1 tsp vanilla extract

For the filling

1 cup of all purpose flour

1 cup of granulated sugar

1 1/2 tbs clarified butter ( or 120 grams of unsalted butter, soft)

1 cup of toasted walnuts (I mix pecans and walnuts ,optional)

1/4 tsp cinnamon (or any favorite spice, optional)

For the egg wash

An egg yolk + 1 tbs cream or milk

In a large bowl combine flour, salt ,soda and baking powder, mix set aside

In another bowl mix together: sour cream,yogurt ,egg white, vanilla extract and set aside

Add the butter to flour mixture and using a pastry knife or a fork,cut and mix until coarse mixture is formed

Slowly add the liquid ingredients, mix and form it into a smooth dough

Transfer the dough into lightly floured surface and gently knead, just to bring it together

Do not overwork the dough

Divide the dough into 2 equal portions, form into flat rectangle shape and place in the fridge to cool about 25-30 minutes

Meanwhile prepare the filling, by simply mixing all the ingredients together

Roll out the dough into about 16″x9″ rectangle shape

Pour half of the filling in the center, leaving at least 2 inches from the sides empty

Flatten the filling with your hand to spread it evenly

Wrap and roll the dough into roulette shape

If the dough gets warmer while working ,wrap it with a wax paper and place in the fridge 15-20 minutes , it’s much easier to slice it when it’s colder

At this point you can preheat the oven to 375°F/180°C

Line baking pan with parchment paper

Slice the Gata roll into triangle or diamond shapes

Using a fork make a few stripes for design

Mix egg yolk with cream a don eggs ash

Bake 20-25 minutes or until golden color

  1. Добрый день! наблюдаю с удовольствием за Вашим проектом, рецепт гаты – просто находка, именно такую гату я очень люблю.
    Подскажите пожалуйста, в видео рецепте Вы добавляете сахар в тесто, а в напечатанном сахара нет. Я, когда пекла – добавляла немного.
    Можно ли уточнить сколько сахара нужно для теста или можно делать без сахара?

    • I’m afraid it’s not possible with this specific recipe, the daugh has to be very soft and buttery ,not sure if sour cream or yogurt can be replaced with anything else.

    • You can omit the nuts ,or replace it with hazelnuts, pecans or almonds
      the classic Gata filling consists of butter, sugar and flour
