Green Beans and Potatoes
Simple summer dish with flat green beans and potatoes. This was one of my favorite dinner dishes as a child, unfortunately can’t say the same about my children’s favorites. There are only a few veggie dishes they’d eat. My mom would make this meal as soon as flat green beans and young potatoes were in season. As many of my summertime veggie dishes , this one too, is very light in calories, flavorful and super easy to make. I am planning on sharing more summertime light meal ideas, so stay tuned for those and for now try and see how you like this one.

1 ½ -2 lbs ( about 750 grams) flat green beans
1-1 ½ lbs mini potatoes, any kind of small potatoes or the ones with fine skin
1 large onion
Green or red chili peppers, hot or mild to your taste, I also like adding shishito peppers
3-4 garlic cloves
2 medium tomatoes, fresh, or an entire can of crushed tomatoes
Fresh herbs : cilantro, parsley, dill, basil 1-2 tbs of each
1-2 tbs red pepper paste
3-4 tbs olive oil
1-2 tsp ground black pepper
Salt to taste
Start by washing and cooking your veggies
Cook the potatoes until tender
Remove the tips of green beans and slice into about 1” wide diamond shapes, cook until tender
While the veggies are cooking, prepare the tomato sauce
Thinly slice the onions lengthwise
Cut the tomatoes into small cubes
Grate or mince the garlic
Slice the peppers into thin strips, remember to remove the seeds
Chop the herbs finely
Making the sauce
In a large skillet or low pot combine olive oil, onions and sauté until onions are tender
Add the peppers and sauté 1-2 minutes
Add the tomatoes, pepper paste,garlic and stir to combine
Add your cooked veggies : potatoes and beans, salt- pepper
Mix everything well and cook another 5-7 minutes
Add chopped herbs, cover the lid and simmer 5 more minutes
Serve hot or cold
