Easy Holiday Desserts – Armenian Gata

One can never have enough easy holiday desserts recipes.

I thought since it’s a special time of the year, I’ll go ahead and make a new recipe for my favorite Armenian pastry, Gata. Since everyone is busy with the holiday rush, I thought a quick and easy holiday dessert recipe would save you some time. Therefore, this holiday Gata is a quick and easy sweet treat everyone will enjoy. This recipe usually makes one 10” or two 5” inch Gatas. Hope you enjoy this recipe and happy baking!

Ingredients

For the dough 

120 grams of unsalted butter at room temp.

⅔ cup sour cream at room temp.

2 eggs (one whole egg and the whites from the other egg. Save the yolk for egg wash)

The zest of one orange (about 1 tbs)

¼ cup sugar

2 ½ cups of flour (add more to help you work with the dough)

Pinch of salt

1 tsp baking powder

For the filling 

120 grams of unsalted butter at room temp.

¾ cup granulated sugar

1 tsp vanilla extract

½ tsp ground cinnamon

¼ ground nutmeg

⅔ cup finely chopped and toasted walnuts (optional), toast at 350°, for 5-7 minutes

½ cup raisins (optional)

 

Directions

Making the dough 

In a bowl combine: flour, salt & baking powder , mix and set aside

In a mixing bowl, on high speed beat butter sugar until fluffy and pale

Lower the speed and add the sour cream, orange zest, egg and the white

Mix for 1-2 minutes and start adding the dry ingredients in 2-3 additions

Stop and scrape I between additions

Do not over mix the dough

Sprinkle the working surface with flour

Place the dough onto the surface, slightly knead and place in the fridge for as long as you need to prepare the filling (10-50 minutes)

Making the filling 

With an electric mixer beat the butter and sugar until pale and fluffy

Add vanilla extract, cinnamon, nutmeg and flour ( filling consistency should be crumbly but stick together when pressed in palm, add extra flour if needed)

Add walnuts and raisin and mix with a spatula

At this point you can start preheating the oven to 375°F degrees

Prepare a lined 10” tart pan or regular baking pan

Place the dough on a floured surface

Tap with hands to spread it into about 9” diameter

Place the filling in the center of the dough

Gather the sides towards the center as if you make a sac

Seal the edges and gently tap into about 10” diameter round

Place in your baking pan

Using a fork, make a few stripes to give the pastry significant Gata design ( refer to YouTube video)

Egg wash with leftover egg yolk ( I add 1 tsp of milk or cream to the yolk)

Bake 30-35 minutes or until golden color

Allow to cool down at least 10-15 minutes before slicing

100 գ փափուկ կարագ

⅔ բ թթվասեր, կամ մածուն

2 ճ գ շաքարավազ

2 ձու, մեկն ամբողջությամբ, մյուսի միայն սպիտակուցը, դեղնուցը պահում ենք վրան քսելու համար

1 նարնջի քերած կեղև

0.5 թ գ սոդա

1 թ գ փխրեցուցիչ

վանիլ

1 թ գ քիչ պակաս աղ

2-3 բ ալյուր, ավելցնել քիչ քիչ, որ ստացվի փափուկ , չկպչող խմոր

Խորիզը 

3-4 ճ գ հալած յուղ կամ 120 գ փափուկ կարագ

1.5 բ շաքարի փոշի, կամ 1 բ շաքարվազ

0.5 թ գ դարչին, կարող եք հիլ էլ ավելացնել

1 բ բոված, մանր կտրատած ընկույզ

0.5 բ չամիչ

վանիլ

Թխել 190°C 30-35 րոպե, կամ մինչև դառնա ոսկեգույն
