This easy and really tasty honey cake recipe may become one of your favorites, and all you need is to spend a little time to make it, then wait a bit longer until it’s ready to enjoy. Most cakes require some time before you can slice, just to set properly and absorb the frosting.This one takes slightly longer, but well worth the wait.

This one cake, as many of the other cake recipes coming from Armenia, has a unique name : Honeymoon, one can never guess or figure out why so, but who really pays attention to the name of the cake? It’s all about the taste and I can guarantee this honey cake recipe is one of the tastiest, or maybe not, I have a couple of more recipes that are very-very delicious.You’ll decide which one is the best 🙂

Ingredients

For the cake batter
2 large eggs at room temperature
½ cup sugar
2 tbs honey
50 grams butter
½ tsp baking soda
½ tsp baking powder
1 ½ – 2 cups of flour

For the buttercream
150 grams unsalted butter at room temperature
¾ can ( about 350 grams) sweetened condensed milk
3 tbs cocoa powder, sifted
½ tsp vanilla extract
⅛ tsp ground cardamom
1 ½ cups finely chopped walnuts

Note* In order to bake all 4 layers at once,I’d recommend to use 2 half size baking pans lined with four 9” round wax papers, watch YouTube tutorial for more details

To make the cake batter
Start double boiler
In a heat proof bowl combine butter and honey and place over the boiler, on medium heat
In separate bowl combine eggs and sugar and whisk until combined
As the butter honey mixture melts , add mixed eggs and stir a few minutes until the mixture starts to form a foamy layer on top
Add baking soda and powder, the mixture will foam even more and become pale color
At this point you can start adding some of the flour, about 1 cup and mix with a spoon
As the mixture thickens into a dough, transfer into your work surface ,add the remaining of flour
Knead into smooth and slightly sticky dough, you may not need to add all 2 cups of flour
At this point you can start preheating the oven to 350 F/ 180 C degrees
Divide the dough into 4 equal portions and roll out each into 9” diameter rounds
Bake about 8-10 minutes or until light golden color, if baking with 2 pans, switch halfway to bake evenly
Let the layers to cool down while you prepare the buttercream

Baking the buttercream
Using a mixer on high speed beat the butter until pale and fluffy
Lower the speed and start adding the sweetened condensed milk, 1 tablespoon at a time
Add in vanilla extract, cocoa powder and cardamom, mix 1-2 minutes
Add the walnuts and mix with spatula, to combine

Frost the cake with ready cream and decorate to your taste
I use walnut halves drizzled with chocolate ganache and chocolate shavings
To make the ganache :in the microwave melt ⅓ cup semisweet chocolate chips with 4 tbs heavy cream or milk
Allow the cake to set at least 8 hours at room temperature or until it softens , preferably on a cake plate with a lid
Transfer into fridge for another hour before you serve

1 թ գ փխրեցուցիչ

1.5 -2 բ ալյուր

բաժանել 4 գնդի, թխել յուղաթերթով 180° C 7-10 րոպե, կամ մինչև ոսկեգույն

150 գ կարագ

1 տուփից մի քիչ պակաս, խտացրած կաթ, ես եփածը օգտագործեցի, շատ համեղ ստացվեց

Վանիլ

1 բաժակից  մանր կտրատած ընկույզ

2.5 ճ գ կակաո

կարող եք մի պտղունց էլ հիլ ավելացնել

0.5 բ կիսաքաղցր սուրճ (լուծվող)
2 ճ գ կոնյակ կամ ռոմ

          Six is a perfect number for those , I always end up eating 6-7 and in a few hours I can go from another 6-7
          No one is there to count calories??
