Honey Whiskey Cake Recipe

Another, classic sweet: honey, whiskey cake or as they originally call it “ mujskoi ideal”, Russian name that makes no sense to me, so I don’t really refer to this cake by that name. To me this is a simple honey whiskey cake with walnuts and caramel buttercream.

I came up with my own recipe for this cake, reduced the sugar, butter amounts, added starch and other few details just to make the cake taste more original. The cake is quite popular among my fellow Armenians and most Armenian bakeries carry their own version. I hope you try my recipe and share your feedback on my social media pages. Honey Whiskey Cake Recipe

Ingredients 

For cake batter

4 large eggs, at room temperature

¾ cup granulated white sugar

2-3 tbs honey

1 tsp vanilla extract

1 cup all purpose flour

¼ cup cornstarch

½ tsp baking soda

1 tsp baking powder

Pinch of salt (¼tsp)

1 cup toasted, crushed or chopped walnuts + ¼ more for topping the cake (optional)

For caramel buttercream

180 grams unsalted butter, at room temperature

1 can caramel sweetened condensed milk ( dulce de Leche) , refer to YouTube tutorial to learn how to make your own caramel

2 tbs honey

2 tbs whiskey or cognac

1 tsp vanilla extract

For whiskey syrup

⅓ cup water

1 tbs honey

2-3 tbs whiskey

Directions 

To make the cake layers

Preheat the oven to 350°F /180°C degrees

Start by combining the dry ingredients, set aside

Whisk the eggs and sugar until pale and fluffy, almost tripled in size

Lower the speed and add honey and vanilla extract

Mix for another minute and start adding dry ingredients by sifting and folding with a spatula

Divide the batter into 3 equal portions

Line a 9” baking pan with parchment paper, spray with cooking oil

Spread the batter evenly and bake 20 minutes or until dark golden color

Set aside to cool down while you make the buttercream

To make the cream

Beat the butter on high speed until fluffy and light

Lower the speed and add the caramel

Then the honey, whiskey and walnuts

To make the syrup

Simply mix all the ingredients

Assembling the cake

Place the first layer on your serving or cake plate

Lightly brush with syrup, use a pastry brush

Spread some of the buttercream and place the second layer, brush with syrup

Repeat until all the layers are frosted, even the top layer , refer to YouTube tutorial for more details

Sprinkle the top with the remaining walnuts and shaved chocolate

Allow the cake to set in the fridge 2-3 hours, slice and enjoy Your Honey Whiskey Cake
