Kadaif Recipe

Middle eastern pastry or sweet Kadaif happens to be one of mine and my other half’s favorite dessert. I don’t make Kadaif very often, as it’s almost addictive and hard to pass by without finishing the entire tray.

It’s like a very light, crispy version of baklava also the methods and ingredients are pretty much similar.

I add a few extra ingredients to sugar syrup, to me Kadaif needs a bit more flavoring.

Ingredients

You will need one package (16 oz / 456 grams ) Kadaif , thawed to room temperature

250 grams melted butter

For the filling

2-2 ½ cups toasted walnuts, coarsely chopped ( toast at 350°F/ 180°C 7-9 minutes)

2 tbs sugar (optional)

½ tsp ground cinnamon, add more if you like

¼ tsp ground clove

¼ tsp ground cardamom

For the syrup

1 cup boiling hot water

¾ cup granulated white sugar

⅓ cup honey

Juice of one lemon, about a tablespoon or more

1 ½ tbs orange blossom water (optional)

1-2 tsp rose water (optional)

You will need 9”x13” baking pan, brushed with butter

Directions

Start by gently separating the Kadaif strands, try not to crush them leaving the long strands intact

Brush the baking pan with melted butter, set aside

Pour the rest of your melted butter over and using your hands, gently toss to make sure the dough is buttered entirely, set aside

To make the nut filling , simply mix all ingredients together

Forming/ stuffing Kadaif logs

Preheat the oven to 350°F/180°C degrees

Take a handful of  strands, place on working surface and form a rectangle, refer to YouTube tutorial for more details

Place some of the nut filling on top part of the dough and roll, gathering the sides

Arrange in your baking pan

Bake 35-40 minutes or until golden color

Making the syrup

In a saucepan combine all ingredients, except for orange blossom and rose waters

Bring to a boil on high heat

Reduce the heat to medium and simmer 7-10 minutes, add orange blossom and rose waters, cook 1-2 more minutes

Pour syrup over ready, baked Kadaif

Allow to set 25-30 minutes before serving
