Lamb Stew Recipe – Armenian Khashlama


Slow cooked veggie and lamb stew recipe, or as we call this dish in Armenian: Khashlama , coming from the word : khashel (means boil or scald in English ).

This dish is traditionally made with bone in lamb meat, but nowadays many make it with beef.

Really simple, and so delicious, flavorful dish, made with tender lamb chops cooked layered in between veggies such as: tomatoes, bell peppers, onions, garlic…

Every Armenian house lady makes her own version of Khashlama, in our house, this dish was made by my father. He’d spend so much efforts: slicing, chopping, peeling, arranging everything thoroughly and then later checking on the dish, making sure it’s salted, spiced properly, sipping that stew broth really loud:)

As a child, I wasn’t a big fan of this dish, or anything made with lamb, I’d eat the potatoes and be happy, and yes, I also loved to sip the hot almost burning broth, only a few sips:)

Now ,can’t blame my own children for being picky eaters, they did go after me and their even more picky father, but I really hope they’ll catch up as they grow older. At least they’ll know from whom to as the khashlama / lamb stew recipe 🙂

This recipe will serve 2-3 people, add or reduce the ingredients to your needs

Ingredients

2 ½ lbs ( about 950 grams) lamb chops or beef, make sure to get the bone- in meat for better taste

5-6 medium russet potatoes,peeled, washed

4-5 medium tomatoes

2-3 medium brown onions

3-4 bell peppers




4-5 garlic cloves

2-3 regular carrots or 7-8 mini carrots

2 medium eggplants or 4-5 mini eggplants, optional

Half bunch of greens such as: parsley, basil, cilantro , use any of your favorites

A few branches of thyme

2-3 cups of any broth or use a bottle of beer, you need just enough liquid to slightly cover the layered meat and veggies

Salt and black pepper to taste

1 tsp ground cumin

Directions

Slice the meat into medium size chunks,wash and set aside

Chop the tomatoes, eggplants, peppers,carrots and onions into thick slices

To arrange the dish:




Save the onions and garlic ,you’ll add those halfway through cooking

Layer half of the greens on the bottom of your pot

Place a layer of tomato slices,peppers, then arrange whole potatoes, then the meat

Spice and season the meat with salt, pepper, cumin ( feel free to use your favorite spices)

Add the eggplants,another layer of tomatoes, bell peppers, top with the remaining of greens

Add the broth or beer

Cover the lid and cook about 45-50 minutes

Add the onions and garlic ,taste the salt and cook another 40-45 minutes or until the meat is tender

Garnish the dish with fresh greens and serve hot
