Lentil and Rice Pilaf Recipe

Delicious, simple and satisfying lentil and rice pilaf , another classic Armenian dish. This pilaf is also a great comfort food, served with a side of pickled or marinated vegetables.

Continuing the month of vegan and vegetarian dishes, this lentil and rice pilaf may be another good addition to your healthy or lent menu.

Ingredients 

Lentil and Rice Pilaf Recipe - Armenian Cuisine

1 ½ cups green lentils , soak in cold water overnight

1 cup rice, I used jasmine rice, washed until the water is clear

Boiling hot water




1 medium onion, finely chopped

2-3 tbs grapeseed oil or butter

Salt to taste

Directions

Cook the rice and lentils in separate pots, with boiling water, about 3-5 minutes don’t overcook!

Rice will cook sooner than lentils , so keep an eye

While the grains are cooking sauté onions with oil until golden color

Discard the water off grains and pour over the onions, first lentils, and then rice




Note* leave some of the liquid with grains, don’t strain completely

Cover the lid tightly and cook over low heat 5-6 minutes

Turn off the heat and allow the pilaf to set 7-10 minutes

Fluff and enjoy
