Lentil Purslane Soup Recipe

Delightful, yet simple lentil purslane soup (Ոսպով Դանդուռով Ապուր). It’s like a comfort meal that you’d crave after trying once . So satisfying and so delicious. This lentil purslane soup was a new discovery for me, and it’s from my favorite Armenian cuisine, the one cuisine that never ceases to amaze me how various and vibrant it is.

Ingredients 

Lentil Purslane Soup Recipe - Armenian Cuisine

1 cup green lentils

6-7 cups cold water

1 bunch fresh purslane, it’s about 8-12oz, could be more , chopped

2-3 tbs vegetable oil

1 medium onion, finely chopped



3-4 tbs salsa or 2 tbs tomato sauce (or lecho , see YouTube tutorial for this)

2 tbs red pepper paste (see YouTube tutorial for this )

3-4 cloves of garlic, minced

Spices and seasonings such as: red and black pepper, cumin, curry, coriander

⅓ cup chopped walnuts

Salt to taste

Directions

Start by cooking the lentils

In a large pot combine water, lentils and cook until fully cooked

While that’s cooking prepare the base for soup

In a large skillet sauté onions until translucent or slightly golden color

Stir in salsa, red pepper paste, garlic , walnuts, purslane and all the spices

Mix and cook only 2-3 minutes

Pour the base into the pot with cooked lentils

Add salt and cook 3-5 minutes

Serve hot or slightly cold

1 բ ոսպ

6-7 բ ջուր

1 գլուխ սոխ

2-3 ճ գ բուսական յուղ

2-3 պճող սխտոր

1 կապ (450 500 գ) դանդուռ

2-3 ճ գ լեչո

1-2 ճ գ կարմիր պղպեղի մածուկ

0.5 բ ընկույզ

Աղ, կորիենդեր, սև ու կարմիր պղպեղ ըստ համի
