Lentil Stuffed Bread Recipe

While the stuffed bread is still fresh in our mind, we might as well make my favorite lentil stuffed bread. Another comfort food for me , but least favorite for my children. They do prefer potato stuffed one much better, that’s why I make this version very rarely. But since I had the dough ready and also cooked some lentils to make salad, decided to share my recipe for lentil stuffed bread as well.

Lentil Stuffed Bread - Lentil Pie Recipe

Ingredients 

For the bread dough

1 ½ cups lukewarm water,1 ½ tsp instant dry yeast, if using active dry yeast, be sure to activate before adding

1 egg, at room temperature

2 tbs vegetable oil

2 tsp sugar

1 tsp salt

3 ½ -4 cups all purpose flour

For the stuffing 

1 ½ cups green lentils, cooked ( wash and place in a pot,

pour enough cold water to cover the lentils and cook until tender, about 5-8 minutes)

1 small onion finely chopped,1 green or red chili or bell pepper, finely sliced

2-3 tbs olive oil,2-3 tbs chopped parsley, or use any of your favorite fresh herbs

Spices and seasonings to taste: ground black pepper, coriander , cumin, cayenne, powdered or fresh garlic

Salt to taste

Butter for brushing hot breads, optional

You will also need a non stick skillet with a tight lid

Directions 

To make the bread

Combine all ingredients in a large bowl and knead a soft non sticky dough

Cover with a plastic or towel and set in a warm place to proof, 45-60 minutes

To make the stuffing 

Cook lentils until tender, discard any remaining water

Sauté the onions and peppers with oil, pour it over lentils

Add spices and seasonings, toss and set aside

Optionally you can add about 150g shredded cheese, mozzarella, fontina, gruyere or cheddar

Making the bread 

Preheat the skillet to 375-400° F/ 190° C degrees

Transfer the dough onto floured work surface, gently knead to remove the air

Divide into 4 or 6 even portions and shape into balls

Using your hands flatten the dough into flat disc

Place the stuffing onto your dough, gather the sides towards the center and seal, refer to YouTube tutorial for more details

Flatten and place on preheated skillet, cover the lid and cook 3-4 minutes or until golden brown color

Turn on the other side and cook more

Brush the hot bread with butter, slice and enjoy
