Lentil Yogurt Soup – Qalagosh

Lentil Yogurt Soup Recipe

Simple, delicious and original lentil yogurt soup from Armenian cuisine, called Qalagosh. The name of the dish presumably comes from Armenian “gayla chash”, which means “meal for a wolf “, as the dish is quite filling . I’d call this a great breakfast or brunch, that will keep you going for many hours.

You don’t need a complex list of ingredients to make this incredibly delightful meal and most importantly it’s super simple to make. You’ll figure it out as you watch the tutorial on YouTube.

Lentil Yogurt Soup - Qalagosh

Ingredients 

⅔ cup lentils, cooked , strained

1 cup strained yogurt

½ tbs flour

2 ½ cups boiling water

1 large onion, finely chopped

2 tbs olive oil

4-5 tbs butter, or clarified butter (ghee)

1-2 cloves of garlic, minced




You will also need dried flat bread lavash to serve with soup

Directions 

Cook the lentils, strain and set aside

In a saucepan combine strained yogurt, flour and give it a quick mix

Slowly add boiling water while stirring

Place over hot heat and bring to a boil, stir occasionally

Reduce the heat and simmer 3-4 minutes , add salt, ready

While the yogurt soup is cooking saute onions with oil and butter

Add minced garlic  and mix

Assembling the meal 

Place crushed lavash in a soup bowl

Add lentils 4-5 tbs

Drizzle with sautéed onions 1-2 tbs

Add a few ladles of yogurt soup and serve
