Little Cakes Porcupine

Something sweet from my childhood : Little Cakes called porcupines :”перожные ежик”, in Russian or “Ոզնի” in Armenian.I’d say these little cakes were quite popular back in 1970’s -80’s and these days are only a sweet childhood dessert reminders for many born in Armenia or Russia.These little cakes are really fun to make,plus so delicious in taste .These can be made both : vanilla and chocolate flavors at the same time by simply adding cocoa powder or melted chocolate to the cake batter. I like making these with poppy seeds and lemon zest, tastes absolutely delicious ! Ingredients

Little Cakes Recipe - Porcupine - Ոզնի Ежик

For the cake

5 Eggs ,at room temperature

1 1/3 Cup granulated white sugar

200 Grams unsalted soft butter

1 Cup sour cream ,at room temperature

1 Tsp vanilla extract

2 Cups of all purpose flour

1/2 Tsp baking soda

2 Tsp baking powder

1/4 Tsp salt

2 Tbs cocoa powder ( for chocolate taste) optional

For the buttercream

200 Grams unsalted soft butter

1 Can sweetened condensed milk (I use caramel kind,just boil regular condensed milk can for 3 hours ,it’ll turn to caramel, like dulce de leche )

1 Tsp vanilla extract

Directions

Preheat the  oven to 350° F/180°C degree

Combine dry ingredients: flour,baking powder,soda,salt ,set aside

In a mixing bowl beat the eggs and sugar till pale and fluffy

Lower the speed and start adding the rest of the ingredients: butter ,sour cream ,vanilla

Start adding dry ingredients slowly in a few batches,Do not over mix!

Divide the cake butter into two equal portions

If making the chocolate kind,add 2 tbs cocoa powder to the one portion and mix to incorporate

Line two 9″X11″ baking pans with parchment paper

Bake 25-30 minutes or until toothpick inserted comes out clean

Let the cakes cool down completely

Using a 3″ cookie cutter cut and arrange to be frosted later

The remaining cake crumble with your fingertips ,set aside

Make the cream

Beat the butter until pale and fluffy

Add vanilla extract

Start adding sweetened condensed milk, a tablespoon at a time

Arranging the mini cakes

Take two circles

Spread the cream onto the first one,press the second on top

Cover entirely with frosting ,except the bottom

Dip in the crumbs

Continue until done

  2. Hi Hegineh, thx for the great recipes. I made vozni today but turned out so hard and for the suger is it really 11/3 cup or its typing error. I used 1/3 cup.

    • Hi Angelajan,
      The sugar should be 1 1/3 cups, the original recipe was for 2 cups,I reduced it.And ,to be honest my vozni never turned out dry or hard,it’s really soft and moist cake,I’d assume you over baked it,maybe?
      If you follow the recipe exactly ,I’m sure it’ll turn out great:)

    How come your frosting is solid and hard and mine is liquid still? Can you please let me know how long you leave it in the mixer? I am guessing it has to do with how long youmix it.

    • Could be the butter if it was way too soft, or the quality of sweetened condensed milk, some brands are very thin,not good for making buttercream. Also the mixer speed should be on low when adding the condensed milk and you need to take your time and add only a little at a time
      Please try these tips ,I’m sure you’ll make better cream next time

  4. Turned out delicious! My cake was a little dense but I’m pretty sure I over mixed. But still it was mouthwatering! I used the boiled cans of condensed milk and my buttercream was very rich and creamy. Thank you for this awesome sight! My sisters and I are all newly weds and your recipes help a lot!
