Maamoul Cookies Recipe – Stuffed Cookies

Maamoul Cookies

Delicious Maamoul, date stuffed cookies, from my Middle Eastern desserts menu. These buttery and crumbly Maamoul cookies are one of my personal favorite sweets. I bake these every time I crave for something different and comforting, as a treat.

I came across a few different recipes and versions for the same cookies, and put down my own recipe for it. I have a few more recipes for similar stuffed cookies, and will be sharing those sometimes soon. Ingredients

1 cup (2 sticks /226 grams) unsalted butter, at room temperature

¼ cup granulated white sugar

2-3 tsp rose water ( optional)

2 tbs orange blossom water (optional)

1 cup fine semolina

1 ½ cup all purpose flour

Pinch of salt

1 pack of baking dates or 7-9 large Medjool dates ( use a food processor to make a paste)

Confectioners sugar for dusting the cookies

You will also need silicone or wooden cookie molds , or mini tart tins just like I the ones I used,see YouTube tutorial for more details

Directions

Beat the butter and sugar on high speed, until fluffy

Lower the speed and beat in the rest of your ingredients, remember to stop and scrape

Preheat the oven to 350°F/180°C degrees

Using a medium ice cream scoop or regular spoon to take some of the dough and roll it into a ball

Make a deep imprint with your thumb, roll the date paste into a smaller ball and place in that imprint

Bring the tips together and close into a ball, use the mold to shape it or simply flatten with your fingers and make a few stripes with a fork , to design the cookies

Bake 20-25 minutes or until light golden color

Allow to cool down 15-20 minutes before serving

Enjoy with a good cup of tea or coffee
