Spicy Marinated Peppers Recipe
My all time favorite wintertime appetizer: spicy marinated peppers. Seasoned with garlic and fresh herbs, so simple and so appetizing. I call these yellow peppers, not sure if they are called differently . But what matters is the taste and how easy they are to make.
My mom would make this every single Fall, normally, late fall, and preserve it for wintertime. Before the wintertime, I was the one to start snacking on those addictive spicy marinated peppers.
I know many can’t or don’t like eating spicy food, those can substitute with sweet peppers, I’m sure it’ll taste just as good.
I’ll put down a quick recipe but eyeballing always works with this appetizer, since there are not too many ingredients .

2-3 lbs fresh chili peppers , any color will work just fine
1 cup apple cider vinegar
1 cup vegetable oils, I use grapeseed oil
½ cup water
3-4 bay leaves
½ tsp black pepper seeds
3-4 garlic cloves, thinly sliced or funky chopped
Fresh herbs: parsley and cilantro, about 5-6 tbs
Salt to taste
In a wide pot combine:oil, vinegar, water, bay leaves, pepper seeds and salt, bring to a boil
Make a cut though the peppers, leave an inch uncut
Blanch the peppers in boiling oil and vinegar mix, about 3-4 minutes on each side
Taste the salt
While the peppers are cooking cut and slice the rest of ingredients, mix the herbs and garlic together, set aside
Arrange the peppers in glass or plastic container, spring with herbs and garlic , gently toss
Stain the remaining vinegar and oil brine over the peppers
Allow to cool down completely, cover with a lid and set in the fridge for 3-5 days to marinate
Enjoy with mashed or fried potatoes, noodles or rice
