These meat stuffed crepes / blinchiks will be the most popular appetizers for an Armenian New Years table. Slightly time consuming, but totally worth it in the end. The best part about these meat stuffed crepes is that they can be made ahead of time, and then kept frozen for about a month. So while being time consuming, they can be a last-minute dish in case you have any unexpected guests. And for Armenians, unexpected guests are very common during the New Years. Hope you try and enjoy this full-calorie and fully delicious food.

Meat Stuffed Crepes Recipe

For the crepes

7 cups of 2% or whole milk (I slightly preheat the milk)

4 large eggs (room temp.)

50 grams of melted butter

2 tsp salt

1 tbs honey

4+ cups all purpose flour (sifted)

For the filling

⅓ cup rice (washed, drained) + 2 cups of water (for cooking the rice)

2 lbs ( about 900 grams) of fresh ground meat (I usually mix a pound of turkey with a pound of beef)

1 medium onion (finely chopped or ground )

2-3 tbs oil (for sautéing the onions) + extra for greasing the fry pan and for frying the blinchiks

Spices/ seasoning for the meat

1 tsp ground black pepper

½ tsp cayenne pepper

1 tsp paprika

½ tsp curry powder

1 tsp coriander

1 tsp garlic powder

1 tbs dried basil or dill (you can use any dried herbs you have on hand)

1 tbs red pepper paste (optional)

For the filling

In a small saucepan, cook the rice until it turns into a pudding consistency. Set aside.

In a large pot, sautée the onions until they turn a golden-brown

Add the meat into the pot and cook until the mixture starts to brown

Add all of the spices, and let the mixture cook for a few more minutes

Turn off the heat and add the rice

Mix to incorporate

Set aside to cool down as we prepare the crepes

For the crepes

In a large mixing bowl, combine the eggs, and the honey

Slightly beat

Mix in the milk, melted butter, salt, and using an electric mixer, beat in the sifted flour a ½ cup at a time

Check the consistency with a ladle. It should be slightly thick, and not too watery

If you need more flour, add a tablespoon at a time until you get to the right consistency. You can always add more milk. If it is too thin, add more flour. If it is too thick, add milk.

Preheat your nonstick frying pan to 375°F. Be sure to use a heavy bottom pan so you don’t burn your crepes

As the pan gets hot, grease the brush with a silicone brush, or refer to my video for other options

Use a medium sized ladle to pour the batter into the pan

Spread the batter in a circular motion to get an even crepe

Fry for 1-2 minutes until the edges of the crepe turn golden-brown

Using a spatula, flip to the other side for 3-5 seconds

Place about one tbs of the meat onto the darker side of the crepe

Fry the blinchiks in hot oil or clarified butter
