My recent cake recipe testing result turned out to be a real decadent treat ,I even gave it a different and unique name :Mochatta ,that’s according the cake taste, mocha- liqueur infused sponge cake layers, frosted with vanilla flavored ricotta whip cream. What would you’ve named it?? Mocha cake maybe ? Then consider this as a mocha cake recipe.

What’s important is the taste and not the name! And the taste is soooo good, texture : moist and fluffy ,slight resemblance with Tiramisu, another one of my favorite desserts.

This mocha cake recipe is quite simple and really easy for anyone to make.

Mocha Cake Recipe

 

Ingredients

For the cake

5 eggs , at room temperature

3/4 cup granulated white sugar

2/3 cup flour

1/3 cup cornstarch

1 tsp baking powder

1/4 salt

For the frosting

1 1/2 cups ricotta cheese, at room temperature ( I place it in a strainer to remove excess liquids)

3/4 cup granulated white sugar

2 cups heavy whipping cream, cold

1 tsp vanilla extract

You will also need a cup of mocha coffee mixed with 2 tbs liqueur ( I use orange cherry liqueur, you can also use ,amaretto or any coffee liquor ,at preference )

1-2 Tbs cocoa powder for dusting the top

Directions

Mocha Cake Recipe

Preheat the oven to 350° F /180° C degrees

Prepare a half sheet baking pan with parchment paper sprayed with oil

In a mixing bowl beat the eggs and sugar until fluffy and pale color, doubled in size

Combine together: flour, cornstarch, baking powder and salt

Turn off the mixer and start adding the flour mixture

Add by sifting the flour mixture over the eggs and folding it with spatula

Try not to deflate the eggs mixture

Bake 20-25 minutes or until it’s golden color

Let the cake to cool down on cooling rack while you prepare the  frosting

In a mixing bowl combine ricotta , sugar and vanilla ,beat 1-2 minutes to incorporate

Add the cold whipping cream all at once and mix until thick consistency reached

Cut the cake into 2 even layers

Place on a cake/ serving plate and start assembling

Generously drizzle the first layer with mocha – liqueur mixture

Add a good amount of frosting and spread evenly

Place the second layer, drizzle with coffee and spread the remaining of the cream

Spread and cover the sides with

Dust with cocoa powder

Chill 1-2 hours before serving

1 բ եռացող ջուր

2 ճ գ մոկա սուրճի փոշի

2 ճ գ ռոմ կամ քաղցր լիկյոր

 

1-2 ճ գ կակաո, կրեմապատած շերտերի վրա շաղելու համար

  1. Hey I followed ur cake recipe. And it really turned out good. But did little bit modifications, coz I am a vegetarian so made a eggless cake. It was super yummy and my frnds loved it… Thanks for recipe…:)
