Nutella Swiss Roll Recipe

Soft, Chocolate Nutella Swiss roll. One of my latest recipe tasting results. Every time I bake anything classic/ basic, I come up with another version it, slightly different and sometimes even better and yummier. This Nutella Swiss roll is one of them.

About a week ago, I posted a recipe for classic vanilla Swiss roll with jam filling. I love my Swiss roll with jam, but this one with cream cheese and Nutella filling turned out so good, that I decided to share.

Chocolate Nutella Swiss Roll Recipe

For the cake

5 eggs, at room temperature

¾ cup granulated sugar

1 tsp vanilla extract

⅔ cup flour

⅓ cup cornstarch

¼ tsp salt

½ tsp baking powder

¼ cup melted butter (or vegetable oil)

You will also need:

*Half sheet baking pan lined with parchment or wax paper

*Baking spray

*Cooling rack and with wax paper

*2-3 tbs confectioners sugar for dusting the Swiss roll before turning out from pan

For Nutella cream cheese filling

1 (8 oz/ 220 grams ) pack of cream cheese, at room temperature

⅓ cup confectioners sugar

⅓ heavy whipping cream

1 tsp vanilla extract

½ cup Nutella spread

1-2 tbs hazelnut liqueur (optional)

For chocolate ganache

½ cup semisweet chocolate chips

¼ cup heavy cream

1 tbs unsalted butter

Making the cake

Preheat the oven to 350°F/180°C degrees

Prepare baking pan: line with parchment paper, drizzle with baking spray

In a bowl combine dry ingredients: flour, cornstarch and salt, sift and set aside

In a mixing bowl combine eggs, sugar and vanilla extract

Whisk on high speed until fluffy and pale color, almost tripled in size

Start adding the dry ingredients by sifting a little bit at a time and folding with spatula

Take time with mixing and folding to make sure no flour lumps are left

Pour the batter on prepared baking pan, spread out evenly

Bake 15-20 minutes or until light golden color

Note* This kind of Swiss roll is time sensitive, you’ll need to roll it while it’s still hot, so be sure to prepare and have everything on hand

Use a knife to slide around the sides, making sure nothing is stuck to the pan

Lightly sprinkle with some of the confectioners sugar

Place a wax paper and cooling rack on top of the cake and turn it upside down

Remove the parchment paper from the back of the cake

Using a pizza cutter, or a knife carefully and thinly cut all four sides of the cake

That will prevent the roll from cracking

Quickly roll the cake and allow to cool down to room temperature while you make the cream

Making the Nutella cream

Beat the cream cheese and confectioners sugar until fluffy

Add vanilla extract, cream and Nutella

Beat a few more minutes, and it should be ready

Making the ganache

Place all the ingredients in a microwave proof bowl and heat 1-2 minutes or until everything’s melted and smooth

Make sure to do that in 30 second intervals

Assembling the Swiss roll

Save about ½ cup of the cream for spreading on the top

Unroll the cooled cake and spread the remaining of Nutella cream cheese on the cake

Roll again and spread the saved cream on top, trying to cover the cake roll evenly

Set it in the fridge while you make the ganache, about 15-20 minutes

Remove from the fridge and pour the ganache over the cake

Use a spatula to spread the chocolate ganache evenly

Additionally you can drizzle with Nutella, sprinkle with crushed nuts and top with berries

Allow the cake to set in the fridge another 15-25 minutes before you slice it
