Okra Soup Recipe

I posted a simple okra soup picture on my instagram page and to my surprise, got a few requests to share the recipe. Well, I never cook any of my soups by strict recipe, eyeball only, so had to put down a quick recipe for this okra soup: vegetarian version and another one: with chicken breast tenders.

Okra is one of those “love or hate” veggies , that I personally love, especially in soups or even better when marinated. I make my okra soup with anything on hand , but I find that it tastes really delicious with quinoa and chicken. In this YouTube tutorial, I’m showing both versions therefore I am posting  a quick recipe for both.

Ingredients

For vegetarian okra soup

1-1 ½ lbs ( about 500 grams) fresh okra + salt and water ( you can eyeball both)

¾ cup quinoa, washed and strained

3-4 tbs Amoretti olive oil

1 medium onion, finely chopped

2-3 medium size potatoes, cubed

1 bell pepper or a few jalapeño peppers, remove the seeds and finely chop




2-3 celery sticks, finely sliced

2 medium tomatoes, peeled and sliced ( or use half a can of crushed tomatoes )

1-2 tbs red pepper paste

3-4 minced garlic cloves

5-6 cups cold water

Chopped mixed herbs: parsley, cilantro, dill and basil 3-4 tbs ( use any of your favorites)

1 tsp ground turmeric

1-2 tsp ground black pepper ( feel free to use any of your favorite spices and seasonings)

Salt to taste

For chicken okra soup

All the same ingredients mentioned above, plus:

1 lbs chicken breast fillet, cubed into bite size pieces

1-2 tsp curry paste or powder

Directions

To make the vegetarian okra soup

With a knife cut the stems from okra and place in a bowl filled with salted water, about 15-20 minutes prior cooking, that will help to remove the sliminess of the veggies

Meanwhile you can peel and slice all of your other veggies and herbs

Strain okra and rinse with cold water

In a large pot combine okra and cold water ( you can also use vegetable stock or broth )

Bring to a boil and add cubed potatoes, cook about 10-15 minutes

Meanwhile start preparing the tomato sauce

In a skillet combine olive oil and onions and sauté until translucent

Stir in: sliced tomatoes, pepper paste, celery, peppers, seasonings and simmer for 3-4 minutes

Add the tomato sauce to the soup, stir and add quinoa

Cook on medium heat another 10-15 minutes, add the salt and herbs

Cover the lid halfway and reduce the heat, cook 5-7 minutes or until the potatoes are cooked

Allow the soup to set 15-20 minutes and enjoy !

For the chicken okra soup

You will go by the same recipe as the vegetarian version except you’ll use chicken broth instead of water and you’ll add curry spice into tomato sauce

Start cooking the chicken until it boils, and a foam layer appears, discard the foamy layer

From that point, go by the recipe mentioned above
