Armenian Olive Bread

Delicious and uniquely spiced olive bread from Armenian cuisine. This was a traditional bread made from Musa Ler, a region in western Armenia.







Traditionally this olive bread was baked during olive harvest, served with wine.

Ingredients

For bread dough 

*This recipe will make two large (14”-16”) or 4 small (7”-10”)breads

1 ¼ cups lukewarm water,1 tsp instant dry yeast, if using active dry yeast, activate before adding

1 tsp sugar,1 tsp kosher or sea salt,1 ½ tbs olive oil

2 ½-3 cups all purpose flour, may need more for shaping

For olive spread 

1 cup pitted olives, finely sliced or processed

I used kalamata and green olives

2-3  tbs olive oil

1 small onion, finely sliced

1 tbs red pepper paste, I have a tutorial on my YouTube channel




½ tbs tomato paste or 1 ½ tbs sauce

2 garlic cloves, minced, ½ tsp cumin, ⅓ tsp ground black pepper

¼ tsp cayenne or crushed red chili

2-3 tbs fresh parsley, I also used 1 ½ tsp fresh oregano

Directions

Making bread dough

Combine all your ingredients for the dough in a bowl

Start by adding water, yeast, sugar, oil, 2 cups of the flour, salt and then the rest of flour




Mix and knead into a smooth non sticky dough

Place the dough into lightly greased bowl to proof, cover with a towel or plastic wrap

May take 45-60 minutes

Meanwhile prepare the olive spread, set aside

Making olive spread 

Sauté onions with oil until translucent

Add red pepper and tomato paste, stir to combine

Turn off the heat

Add spices and herbs, finally the crushed olives

Preheat the oven to 480° F /210° C, place one of your heavy baking pans inside to heat, you will be baking the breads on preheated pan for better result

Place the dough on your work surface, lightly knead to remove the air

Divide the dough into two or four equal portions and form into balls

Dust your work surface with flour and rollout the dough into about an inch thickness

Thinly spread olive mixture

Place on a piece of parchment paper or a foil

Carefully transfer onto preheated baking pan

Bake 12-15 minutes, or until the crust turns golden

Serve with a glass of red wine, optional
