Olive salad Bazerkani from Armenian cuisine, or as it was called by people “ shepard’s dinner”. Bazerkani comes from Western Armenian region Musa Ler. Can’t really tell, why it was called this way, what matters is that another great Armenian meal recipe is being shared for many of you to try .

Ingredients 

Olive Salad Bazerkani Recipe - Armenian Cuisine

350-400 grams pitted green olives

1 small onion, finely chopped , 1 large or a few medium tomatoes, finely cubed

1 garlic clove, minced (my addition to the recipe )

½ tbs tomato paste




½ tbs red pepper paste (my addition)

⅓ cups chopped walnuts

1-2 tbs olive oil

2 tbs pomegranate sauce

Fresh herbs : parsley, thyme or cilantro

Directions 

Combine all ingredients in a bowl, toss and set aside to marinate , 35-40 min

350-400 գ կանաչ ձիթապտուղ, կտահարված

Սոխ, սխտոր, մաղադանոս, ուրց

1-2 ճ գ ձիաթապտղի յուղ

2-3 ճ գ նռան օշարակ (թանձրուկ)

0.5 ճ գ տոմատի մածուկ

1 ճ գ կարմիր տաքդեղի մածուկ (պարտադիր չէ)

0.5 բ ընկույզ

Սև ու կարմիր տաքդեղ
