Sweet Pastry Bread Terterook Recipe

Bread is good, pastry bread or sweet bread is even better. And today I’m sharing a pastry bread from Armenian cuisine called terterook.

Terterook is a pastry, which is baked during a religious festival called Vardavar. It celebrates the transfiguration of Jesus Christ.

You can google more info about that beautiful Armenian festival.

Ingredients

Sweet Pastry Bread Terterook - Armenian Cuisine

½ cup plain yogurt, at room temperature

½ cup milk, I used full fat

100g unsalted butter, softened

1 tsp baking powder,1 tsp salt,1 tbs sugar

2 ½ -3 cups all purpose flour , use as much as you need to make a soft, non sticky dough

For butter spread use 1-1½  tbs butter ghee (clarified butter, I have a YouTube tutorial for ghee)

2-3 tsp sugar, use more or less to taste

Note* I make my ghee with salted butter, if using regular unsalted ghee , sprinkle a pinch of salt to each bread layer before rolling

Directions 





Combine all ingredients for the dough and knead a soft , non sticky dough, set aside to proof 35-45 minutes

Divide the dough into 6-8 equal portions and form smooth balls

Roll out each ball to 8”-9” diam. disc

Spread with ghee, sprinkle with sugar and salt

Roll into a log and twist a few times

Preheat a griddle or nonstick skillet to 410°-420°F

Bake on each side 3-5 minutes or until golden color

Serve hot or warm

  1. I was taught this sweet buttery bread by my friends Mother Margaret Tapalzian many years ago….its a family favorite very plain but freezes well we enjoy for breakfast…….
