Persian Cookies Recipe

Turns out one of my favorite childhood sweets that we used to call Badam, are in fact Persian cookies with a different name : Ghotab . Still can’t find out why they were called and even made slightly different, but what matters is that delicious Persian cookies from childhood are back, thanks to one of my dear Instagram friend Fariba’s post.

This is why my most favorite social media happens to be Instagram , a place where I get to see, learn and even get inspired from my virtual friends, and even become friends in real life.

Persian Cookies Ghotab

For the cookies dough

200 grams of unsalted butter, cold cut in cubes

2 egg yolks, at room temperature

1 cup sour cream or yogurt, at room temperature

2 + cups of all purpose flour

½ tsp baking soda

1 tsp baking powder

¼ tsp salt

For the filling

1 egg white at room temperature

¾ cup granulated white sugar

1 cup toasted walnuts, finely crushed ( pistachios,almonds,pecans or hazelnuts can be used too), toast walnuts at 350° F /180° C for 7-10 minutes

⅓ tsp ground cinnamon

¼ tsp ground clove

¼ tsp ground cardamon

1 tsp rose water ( optional)

To make the dough

In a large mixing bowl combine : flour, salt, baking powder, cold butter

Using a pastry cutter or two knives cut and mix all together until a crumbly mixture formed

Mix the baking soda with sour cream , add the egg yolks and mix everything to combine

Add the wet ingredients and mix with spoon or spatula, then switch to hands

Knead to a smooth dough, add only a little extra flour if needed

Do not over knead the dough!

Using a small ice cream scoop or a tablespoon, form little balls from the dough and place in the freezer while you make the filling

To make the filling

In a bowl combine egg white and sugar

Mix with a whisk until the mixture is foamy and white

Add the spices and crushed nuts, mix set aside

Making the cookies

Preheat the oven to 375° F/ 190° C

Line a baking sheet with parchment paper or simply use a non stick baking pan

Roll out each cookie dough ball into 3” diameter circle

Place a teaspoonfull of the filling in the center, don’t put too much filling

Fold into semi circle and seal the edges

Bake 15-20 minutes or until light golden color

Allow to cool down 5-10 minutes, dust with confectioners sugar and serve
