Potato Bulgur Veggie Balls
Yet another simple and delicious recipe from Musa Ler, Western Armenian cuisine: potato bulgur veggie balls.
Great vegetarian appetizer, that can be served warm or cool , with a side of green or tomato salad. To the original recipe , I added chopped grape vines, only the tender,young leaves.

Feel free to spice it to your preference, it’ll only taste better.
Getting to the recipe and hoping many will give it a go.
1 ½ lbs potatoes, peeled cooked , 1 ¼ cups fine , #1 grind bulgur
1 small onion, finely chopped
2 ½ -3 tbs olive oil
1 garlic clove (not in the recipe)
Salt , pepper to taste
⅓ tsp red crushed chili , optional
Fresh herbs: parsley, cilantro or dill , ½ tbs each
I also added a few leaves of funky chopped , tender grape vines , not in the recipe
In the original recipe , there were also 1 tbs tomato paste and 1 fresh tomato, finely cubed , that I didn’t add
Start by peeling and cooking potatoes
While those are cooking, prepare the rest
Sauté onions with oil , until translucent
Add grape leaves and minced garlic, stir and cook only for 1-2 minutes
Place bulgur in a large bowl , add in cooked , hot potatoes, onions, spices and seasonings
Mush until incorporated
Add fresh herb and mix again
Cover with plastic and set aside for 10-15 minutes to soften and get ready for shaping
Using a scoop, shape into preferred size and enjoy your veggie balls
