Potato Stuffed Bread Recipe

My children’s favorite “jumbo perashki” or more like a potato stuffed bread. To me this is a great comfort food, plus it’s a time saver when I’m really busy and need to make something filling, something they all love. I know, potato stuffed bread may not sound like the easiest thing to make, but trust me, if you try it, you’ll see that it’s quite simple.

And the best part is: you can make this ahead of time, place in the fridge, covered with a loose plastic wrap or towel, and bake it when ready to serve. Just be sure it reaches room temperature before you bake.

Ingredients 

Potato Stuffed Bread - Jumbo Potato Pie Recipe

For the bread dough 

1 ½ cups lukewarm water, 1 ½ tsp instant dry yeast, if using active dry yeast, be sure to activate before adding

1 egg, at room temperature

2 tbs vegetable oil

2 tsp sugar

1 tsp salt

3 ½ -4 cups all purpose flour

For the stuffing 

5-6 medium potatoes, peeled, washed cubed or slices for faster cooking

Cold water for cooking, just enough to cover potatoes

2-3 tbs butter

1 small onion, finely chopped, I didn’t use it

Spices and seasonings to taste, please refer to YouTube tutorial

I used: ½ tsp black pepper, paprika, coriander, garlic powder, cayenne , curry

Dried herbs: dill, basil, you can also use fresh herbs to taste

Salt to taste

You will also need a 16” round baking pan, or you can choose to make 2-4 smaller breads

Directions 


To make the bread

Combine all ingredients in a large bowl and knead a soft non sticky dough

Cover with a plastic or towel and set in a warm place to proof, 45-60 minutes

To make the stuffing 

Cook the potatoes until tender, discard any remaining water

Sauté the onions with butter or oil and pour over the cooked potatoes

Add spices and seasonings, mash until soft consistency

Making the stuffed bread 

Preheat the oven to 400° F/ 200° C degrees

Transfer the dough on floured work surface, gently knead to remove the air

Using your hands flatten into 10”-12” diam. disc

Place the potato onto your dough, gather the sides towards the center and seal, refer to YouTube tutorial for more details

Flatten and place on your baking pan and continue tapping and flattening until the size reaches to 16” or a bit less

Make a small hole on the bread, to help release the steam while baking

Lightly dust with flour or egg wash if you like shiny golden finish

Bake 30-35 minutes or until golden color

Allow to set on a cooling rack for 10 minutes, slice and enjoy
