Purslane Cucumber Salad Recipe
Armenian cuisine never stops amazing me with its simplicity : purslane cucumber salad, dressed in garlic yogurt dressing. How light and healthy does this sound . On these hot and humid summer days, cold and refreshing salads are lifesavers. The preparation barely takes any of our time , plus they’re so satisfying, not to mention: extremely delicious!

1 lbs fresh purslane, blanched or tenderized, watch YouTube tutorial for directions
2-3 medium cucumbers, sliced into circles or semi circles
½ cup plain yogurt
2-3 garlic cloves, minced
Salt-pepper to taste
Tenderize purslane in hot water
Slice cucumbers, mince garlic and mix with yogurt
Season with salt and pepper
Add cooled , drained purslane and mix to incorporate
Set in the fridge for 25 minutes and enjoy your purslane cucumber salad !
