I’m sure, I won’t be the only person who never made croissants, just because the process is time consuming. This super quick croissant recipe came from my Instagram friends. I saw two posts with similar recipes and decided to slightly revise and make it a bit different, as I wanted to have plain croissants but still have the cheese taste, and I really wanted it to have more layers. The original recipe called for cheese filling and 8 layers for the dough. I added the cheeses to the dough and added the layers, also one recipe called for just the milk as liquid ingredient, the other was with yogurt and milk. Anyways, not sure if you guys are interested in changes, but I’m sure this quick croissant recipe is a keeper.

Ingredients

Quick Croissant Recipe

250 grams of creamy cheese, (I mixed 125 grams of finely shredded Gouda cheese with 125 grams of fancy shredded mexican blend, use any kind you like, but no feta, the cheese needs to melt)

2 Eggs, 1 whole egg and the white from the other egg, but save the yolk for the egg wash

½ cup buttermilk ,or full fat milk

½ cup plain yogurt, full fat

⅓ cup vegetable oil

1 tsp salt, I use kosher, if using regular saltreduce the amount to ¾ tsp



1 tbs sugar

2 tsp instant yeast, if using active dry kind, make sure to activate before adding

3-3 ½ cups of all purpose flour

You will also need 150-200 grams of very soft unsalted butter for spreading the layers

For the egg wash

Use the remaining yolk and 1 tbs cream or milk

Directions

Quick Croissant Recipe

In a microwave safe bowl combine together milk and yogurt to  warm up about  60 seconds

Add the shredded cheeses to the milk-yogurt mixture and stir to incorporate

In your mixing bowl beat together the oil and eggs, beat in the milk and cheese mixture and stir

Start adding the yeast and  flour one cup at a time

Knead the dough into smooth but not sticky dough, avoid adding too much flour

Cover the dough with plastic and allow to rest and rise about 45-60 minutes

Transfer the dough onto lightly floured work surface

Divide into 10 equal portions and form into a ball shape

Roll out each to 7”-8” diam. circle and place on a plate lined with parchment paper

Spread with softened butter , and place the second layer on top




Continue until all of the layers are buttered ,except for the top layer

Cover with plastic and place in the fridge to set, about 1 ½ to 2 hours or more

Lightly flour your work surface and roll out the stocked dough into 17”-18” diam. circle

Using a pizza cutter or regular sharp knife,cut into 16 triangles

Cut an inch slit on top of the triangle (the widest part) fold out and roll into crescent shape

Place the croissants on a baking pan lined with parchment paper

 

Allow to rise another 35-45 minutes , you can place them in lightly preheated oven

NOTE* Make sure the oven should be turned off, temperature slightly warm and not hot

Egg wash and bake at 350 F/180 C preheated oven,about 30-35 minutes or until golden color

If baking 2 pans at a time, remember to switch the baking pans halfway through the baking

Tips*

These freeze very well, any remainings can be wrapped in plastic and placed in the fridge up to a month,and used after.Make sure to do that the same day, so they taste fresh when unfrozen

      I use instant yeast only, no need to activate
      You can activate yours with 1/4 cup of warm milk ,you may need to add a bit extra flour
