Red Bean Roulette Recipe

Holiday appetizer from Armenian cuisine: red bean roulette . Very delicious and healthy dish , if you decide to leave out the butter. Great source of protein for vegetarians or vegans . My mom and grandmother would make this roulette every single year for our New Year’s table. We’d always eat this with some fresh lavash bread and herbs, so good and so yummy.

Preparation isn’t difficult, only a bit time consuming. I would suggest to make this with dry red beans and not to use the canned ones.

Another suggestion is to use a grinder and not a blender, to mash the beans, you don’t want to end up with big chunks of beans skin. You do need to make a smooth mixture in order to have a great, looking red bean roulette on your Holiday table.







Those who don’t want to spend time on rolling and waiting for bean roulette to chill,  can simply spread or arrange it on a platter or in a salad bowl and garnish with pomegranate seeds , herbs or walnuts. Refer to YouTube tutorial for more details.

Ingredients 

Red Bean Roulette Recipe - Լոբով Պաշտետ

1 ½ -2 cups dry red beans, cooked

1-2 cloves of garlic minced

⅔ cup walnuts

2-3 tbs fresh herbs: cilantro or dill, I used dried herbs

2-3 tbs olive oil, ⅓ tsp ground black pepper

½ tsp ground coriander , ¼ tsp ground red chili or cayenne




¼ tsp ground curry , feel free to use your favorite spices

Salt to taste

100-150 grams soft butter, optional

You will need wax or parchment paper and baking spray

Directions

Cook the beans: wet in hot water 1-2 hours, discard the water, add cold water, place over the heat , let it to come to a boil ,

discard the water, add fresh water and cook on medium to low heat until cooked , remember to salt it to taste

Drain the cooked beans completely , you need them to be dry

Grind the beans, walnuts and herbs, use a grinder not a blender

Place the mixture in a large bowl and add all your spices, garlic and oil




Mix very well to make sure everything’s well incorporated

Place the wax paper on a flat surface, drizzle with cooking spray

Place the bean mixture on the greased paper

Use a spatula to spread it into desired thickness rectangular shape

Spread the butter on beans and roll the roulatte

Place it in the fridge overnight, or at least for 8 hours

Immerse a sharp knife into hot water and slice the roulatte

Arrange on a serving platter , garnish with pomegranate seeds, walnuts  or herbs and enjoy

1.5-2 բ եփած կարմիր լոբի

1 բ ընկույզ

1-2 պճեղ սխտոր

2-3 ճ գ բուսական յուղ

Թարմ կամ չոր կանաչեղեն`սամիթ, ռեհան, համեմ

Համեմունքներից` աղ, սև ու կարմիր տաքդեղ, կորիենդեր, կարի
