Roasted Beetroot Pasta Salad Recipe

Simple, quickly made roasted beetroot pasta dish. So satisfying and delicious. I really enjoy spontaneous cooking, when there’s no pressure of following recipes or directions on how to make a simple,delicious and most importantly a healthy meal.
I’m sure if you watch YouTube tutorial for this roasted beetroot pasta dish, you’d no longer refer to this recipe or I’d say directions.

4-5 (16oz) medium sized beetroots, washed, peeled, sliced into bite size or slightly larger prices

2-3 tbs olive oil

5-6 garlic cloves, sliced

Season to taste: I used black pepper, cayenne, turmeric, dried oregano or thyme

Sea salt to taste

You will also need any of your favorite pasta, cooked

I also used following greens to serve the dish over:

baby kale and arugula

For pasta dressing you will need

The zest and juice of one medium lemon

2-3 tbs olive oil

1-2 garlic cloves minced

¼ tsp ground black pepper

Salt to taste or if pasta is salty enough don’t add any extra salt

Roasted Beetroot Pasta Salad Recipe

Preheat the oven to 450°F/210°C degrees

Spice and season beetroot and spread evenly on a lined baking pan

Roast 30-35 minutes or until cooked

Meanwhile prepare the dressing for pasta by mixing together all the ingredients: lemon juice, zest, garlic, oil and black pepper

Cook the pasta

Pour the dressing over pasta, toss and add the beetroot

Serve over greens or as is, cold or warm
